I know growing up. We never had pork in the summer. You could not even buy it in the grocery stores. My Granny said Pork was sold and eaten during the Fall, Winter and Spring. Sometimes you would find worms in the Ham and Pork Chops. That’s why it was sold during the cooler seasons. Anyone else remember this? I was just talking to some friends about this the other day. Now days you can get any kinds of Fruits, Vegetables and Meats any time of the year.

It’s amazing that 19th century cooking, with natural foods and food prep, is very similar to food prep in the 21st century. The 20th century was focused on preservatives, canned, and “Frankenstein-food”. Thank goodness we’ve gone back to earlier and natural forms of food.
