I used cherry blossom leaf blocks for the walls and roof, but NOT the floor. Mobs spawn fine, just slowly. Should I switch out the cherry blossom blocks? I wanted to make the farm look like a giant tree. Mobs can't spawn on the roof since it's leaf blocks.

You have to make the whole farm with solid blocks, after that you can place the leaves around the blocks. Leaves slow down the farm.

If you’re having that issue you can go halfway to the chute where they fall (into the kill pit) use 4 signs and a bucket of water to help slow down the mobs, if they spawn without armor they will still be one hit to kill. As for the still seeing blocks in the ground that’s normal, the creators render distance is most likely on 2, if you want this affect go to your settings and set simulation distance as low as it will go.
