Khichdi is nutritious and easy to digest, making it a favorite for all ages. Here’s a basic recipe for making khichdi:
Ingredients:
• 1/2cup rice
• 1/2 cup yellow moong dal
• 1 tablespoon ghee (clarified butter) or oil
• 1/2 teaspoon cumin seeds
• 1/2 teaspoon turmeric powder
• 1/2 teaspoon ginger,garlic(fresh, grated or ground)
• 1 small green chili (optional, chopped)
• 1/2 teaspoon salt (adjust to taste)
• 3 cups water (adjust for desired consistency)
• Fresh coriander leaves for garnish (optional)
Optional vegetables (you can add any of these, chopped):
• small carrot, onion,tomato
• peas
• potato
• cauliflower
Instructions:
1. Rinse rice and dal: Wash the rice and moong dal thoroughly under running water. Drain and set aside.
2. Cook the khichdi:
Close the lid and cook for 2-3 whistles on medium heat (about 10-12 minutes)

• Take pan -Heat ghee or oil in a pressure cooker or a large pot over medium heat.
• Add cumin seeds and let them splutter. Then add the grated ginger and garlic and chopped green chili. Saute for about 30 seconds.
• If you’re adding vegetables, toss them in now and sauté for 2-3 minutes.
• Add the cooked khichadi , followed by turmeric powder and salt. Stir everything well to combine.
4. Serve: Once the khichdi is done, give it a gentle stir. You can add a little more ghee on top for richness. Garnish with fresh coriander leaves, if desired.
Khichdi is often served with yogurt, pickle, or papad on the side for added flavor. It’s a versatile dish, and you can modify the spices and vegetables according to your taste.
