These look beautiful! I have some leftover Wool Ease Thick and Quick. I've heard people suggest doubling Wool Ease to substitute for Thick and Quick - do you think it would work to do the opposite and use Thick and Quick instead of doubling regular Wool Ease here?

The wool ease thick and quick might be a little thicker, but should be close! You'll want to either check your gauge, or go by measurements instead of stitch counts (as long as you're comfortable with making your own modifications :D ), adjustments would be to the # of rows of the cuff, as the length of the cuff (should be 7.5 - 8 in.) and then for the first round after the cuff is seamed, if 22 stitches is too many in the round, you can take a couple stitches away, but just make sure you have an even number. Stitch count isn't really that important to this project - you'll just want to make sure the sizing is the same. And then, if you've adjusted stitch count for the mitten portion, you'll likely want less stitches for the thumb hole as well, so you might want to decrease additional stitches for the thumb hole as well.

I’m a little sure of the gauge. Are the ten stitches supposed to be joined in a round with a slip stitch?

Yes! You'll want to just use one strand if using a bigger yarn selection, but make sure to check your gauge to ensure proper fit!
