How you cut it will surprise you immediately for the particular effect of the vertical layering, for its softness and originality. Moreover, it is a dessert that lends itself to being filled in a thousand possible ways and as you prefer: cream, nutella or chocolate. 📝 INGREDIENTS for the biscuit dough:
6 large eggs at room temperature
80 grams of sugar
the zest of half an organic lemon
the zest of half an organic orange
80 grams of sunflower oil
40 gr of "00" flour
40 grams of chopped almonds (or almond flour)
📝 INGREDIENTS for the custard:
3 large egg yolks
90 grams of sugar
550 ml of milk
25 gr of cornstarch (corn starch)
25 grams of flour
4-5 pieces of whole lemon and orange peel
📝 INGREDIENTS for the syrup:
10 tablespoons of water
2 tablespoons of sugar
2 tablespoons of maraschino (or your favorite liqueur)
a few pieces of orange zest
📝 INGREDIENTS for the final decoration:
500 gr of fresh whipping cream
2 tablespoons of sugar
chopped pistachios, hazelnuts, almonds
sugar paste roses
30 gr of extra dark chocolate (for the writing)
♨ COOKING:
15 minutes at 180 °, oven tray 35x35
