Hello, if you would like to make them the day before yes you can definitely place them in the refrigerator. I recommend placing them inside plastic container, uncovered. If you leave it sealed shut it, the strawberries will get soft and start sweating excessively. I always recommend dipping them a few hours prior to the event or client pickup but if you're unable to that is a great alternative!
