I cook the whey down until a pasty dough, then spread it out and dry well, put in blender and make powder. This saves without electricity.. great for baking.

This a great, concise video on cheese making. And the cheese press name had me chuckling for a while. My mother grew up on a farm in Minnesota and we’ve been arguing about the different ways to make cottage cheese. Do you have any additional thoughts on the subject?

I use (food grade) gypsum to make tofu. Can one make cheese (like this recipe) with gypsum? If it acts as a coagulant agent to transform soymilk into a solid, why won't it do the same for milk?

Does it need to be at 140 degrees if it’s raw milk and we don’t want to kill off all the beneficial nutrients? So it’s just vinegar, no rennet? Thanks!
