Hello, my fabulous KETO friends! This recipe for KETO Chicken Paprikash will have you feeling like a gourmet chef. As I shared in the video, it tastes unlike anything you've ever had before. I hope you'll try it soon and share your success story!
CHICKEN PAPRIKASH
INGREDIENTS
1 Pound Ground Beef
Mix in 1/3 C KETO breadcrumbs. (Simply toast two slices of KETO bread until dry, then blend them in a food processor or Nutri Bullet. Or see recipe here: • KETO Great Breadcrumb ... )
Add 1 Tbsp Dehydrated Onion
S & P and Onion powder to taste.
Form into meatballs. Using a scooper really makes a breeze of this!
2 - 3 lbs. Chicken, Cut up. Choose the pieces you prefer to eat; you can use breasts, thighs, drumsticks, or any combination.
1 Tbsp Olive Oil
1 Medium Onion, Diced
2 Medium Carrots, sliced
2 Stalks Celery, sliced
1 Pound Mushrooms, roughly chopped
Chicken Base (1 Tbsp “Better than Bouillon” Base or 2 Bouilloncubes)
2 Cups Chicken Stock
1/2 Cup Heavy Whipping Cream (for finishing the Chicken Paprikash when it’s done cooking.)
S & P, Paprika, up to 1 tsp. Xanthan Gum
Butter
RECIPE
Heat a Tbsp of Olive Oil in your pan.
Sear the meatballs on Medium Heat until they are mostly cooked. They will continue to cook later, as you cook the Paprikash.
Remove the meatballs, but leave any drippings.
Put chicken in the same pan on Medium to Medium High to sear it for about 10 minutes, depending on the size of the pieces.
Remove the chicken and set aside. Depending on the cut of chicken you use, you may want to debone it once it’s cool enough to handle.
Melt 2 Tbsp Butter in your pan on Medium.
Add the chopped vegetables and mushrooms, stir together, and cover the pot to let them sweat for about 10 - 15 minutes.
Add Parsley, Paprika, and Xanthan Gum
Stir in Bouillon/Base Chicken flavoring
Add 2 Cups Chicken Stock and heat on Medium.
Cook according to your pot’s guidelines, i.e.: 4 - 6 Hours on High in a CrockPot (or 6 - 8 Hours on Low), 2 Hours in a stockpot on the cooktop, etc.
When it’s fully cooked, check seasoning and add more to taste, if desired. I added a bit more S & P, Paprika, and some Onion Powder.
Stir in 1/2 Cup Heavy Whipping Cream until mixed in.

My slow cooker that sears meat is a very old Hamilton Beach that they don't make anymore. GreenPan makes several slow cookers that allow you to sear directly, THEN slow cook - which is SUCH a great feature! @@KETOover50 it should be noted, the Instant Pots all come with a slow cook + a sauté mode, but my one attempt at a pot roast was disappointing. At the moment, I sear meat in the IP since it’s stainless, and Tall. If I ever get one of those skillet “collars” made of silicone, I would use my 12” carbon steel skillet, as it gets blazing hot, which doesn’t (safely) happen in my Blue Diamond skillets nor (by programming) the sauté in the IP.

The Good News (until we learn any Bad news!) is that regular old crock pots can use a heat proof liner (which I would not directly place a newly seared roast into). The liners can be lifted out and directly placed into a bowl to refrigerate for later. The crock gets Zero stain, and washes out easily.

@@ArtistInNewHampshire I definitely have an Instant Pot on my wish list, but I have no place to put it! I'm a fan of ALL kitchen gadgets and think having a pressure cooker would be fun. I want to make Lamb Curry in one. yum!

I was hesitant to consider a stew with both meatballs & chicken, it seemed unusual to me, but seeing your combination made sense, and looked delicious! I think I would use part ground lamb with the meatballs to add a bit of even further richness, and that recipe looks actually incredible! Fairly simple, too! Thanks so much!

If you try it with lamb, let me know how that works. I think it might be too much, as lamb has such a dominant flavor. I love this with the ground beef, as it absorbs the flavors of the mushrooms, onions, and paprika. I have a great grilled lamb chop recipe that includes Basil, Cinnamon, Curry, and Dill. Cinnamon, when not sweetened, adds such a unique flavor.
