Hello, my fabulous KETO friends! This recipe for KETO Chicken Paprikash will have you feeling like a gourmet chef. As I shared in the video, it tastes unlike anything you've ever had before. I hope you'll try it soon and share your success story!
CHICKEN PAPRIKASH
INGREDIENTS
1 Pound Ground Beef
Mix in 1/3 C KETO breadcrumbs. (Simply toast two slices of KETO bread until dry, then blend them in a food processor or Nutri Bullet. Or see recipe here: • KETO Great Breadcrumb ... )
Add 1 Tbsp Dehydrated Onion
S & P and Onion powder to taste.
Form into meatballs. Using a scooper really makes a breeze of this!
2 - 3 lbs. Chicken, Cut up. Choose the pieces you prefer to eat; you can use breasts, thighs, drumsticks, or any combination.
1 Tbsp Olive Oil
1 Medium Onion, Diced
2 Medium Carrots, sliced
2 Stalks Celery, sliced
1 Pound Mushrooms, roughly chopped
Chicken Base (1 Tbsp “Better than Bouillon” Base or 2 Bouilloncubes)
2 Cups Chicken Stock
1/2 Cup Heavy Whipping Cream (for finishing the Chicken Paprikash when it’s done cooking.)
S & P, Paprika, up to 1 tsp. Xanthan Gum
Butter
RECIPE
Heat a Tbsp of Olive Oil in your pan.
Sear the meatballs on Medium Heat until they are mostly cooked. They will continue to cook later, as you cook the Paprikash.
Remove the meatballs, but leave any drippings.
Put chicken in the same pan on Medium to Medium High to sear it for about 10 minutes, depending on the size of the pieces.
Remove the chicken and set aside. Depending on the cut of chicken you use, you may want to debone it once it’s cool enough to handle.
Melt 2 Tbsp Butter in your pan on Medium.
Add the chopped vegetables and mushrooms, stir together, and cover the pot to let them sweat for about 10 - 15 minutes.
Add Parsley, Paprika, and Xanthan Gum
Stir in Bouillon/Base Chicken flavoring
Add 2 Cups Chicken Stock and heat on Medium.
Cook according to your pot’s guidelines, i.e.: 4 - 6 Hours on High in a CrockPot (or 6 - 8 Hours on Low), 2 Hours in a stockpot on the cooktop, etc.
When it’s fully cooked, check seasoning and add more to taste, if desired. I added a bit more S & P, Paprika, and some Onion Powder.
Stir in 1/2 Cup Heavy Whipping Cream until mixed in.
