Will the meat be rare inside? I usually like it when it’s rare inside and soft because it enhances the taste I don’t like it when it’s fully cooked

No, it will be fully cook but very soft and tasty. It won’t be dry at all. However, it depends on how big is the leg of lamb. It is important start at high temperature and then reduce it. Last week, I did 450 for 2hrs and turned out good too. Probably you can try 450 for an hour and then 350 for another hr?
