Ingredients:
• 1 lb red kidney beans (soaked for 8 hours or overnight)
• 2 tbsp vegetable oil
• 1 tbsp olive oil
• 1 smoked sausage, sliced
• 1 bell pepper, chopped
• 1/2 onion, chopped
• 2 cloves garlic, minced
• 2 celery stalks, chopped
• 1 cup jasmine rice
• 8-10 cups chicken stock (homemade or canned)
• 2 tsp Creole seasoning
• 2 tsp dried parsley flakes
• 1/2 tsp cayenne pepper
• 1 tsp smoked paprika
• 1 tsp rubbed sage
• 1 tsp oregano leaves
• 2 bay leaves
• Salt and pepper to taste
Instructions:
1. Prepare Chicken Stock: Boil chicken breast in water to make homemade chicken stock. Use 8-10 cups for 1 pound of beans. Season with salt and pepper.
2. Cook Rice: In a rice cooker, add jasmine rice, water (about 1/2 inch above the rice), and a pinch of salt.
3. Prepare the Beans: Drain soaked kidney beans and set aside.
4. Cook Vegetables: Heat vegetable oil and olive oil in a large pot over medium heat. Add bell pepper, onion, garlic, and celery. Sauté for 4-5 minutes until the onion is soft.
5. Combine Ingredients: Add drained kidney beans to the pot. Mix in the seasoning (Creole seasoning, parsley, cayenne pepper, smoked paprika, rubbed sage, oregano leaves, and bay leaves). Stir for 3-4 minutes.
6. Simmer: Pour in 8 cups of chicken stock. Stir well, cover, and simmer for 1.5 hours.
7. Add Sausage: Add sliced smoked sausage, cover, and cook for an additional 20-30 minutes. If beans are not tender, cook for another 20 minutes.
8. Serve: Plate the red beans and rice and enjoy!
