Just getting ready to start making my first sauerkraut found your video I really liked it because you have the camera up close so I could see everything that you were doing. Other videos I have watched you're at a distance and you really can't see the process so thanks for doing it that way it really helped.

I like your cutco knife. I am 65 and use my mom's set she got as a wedding present! They are the best in the market. I use it to make my sauerkraut too. PS, good kraut video!!

Be careful with how much caraway seeds you put in. You can ruin the batch of sour kraut really quickly. Less is key.

Hi - I want to know what shall I do with my lots of brine, just before refrigerating my Sauerkraut? Shall I take extra brine out or I should still keep my Sauerkraut submerged in brine, even in fridge? Please clarify

I keep it all in there. Just put the lid on the jar and throw it in the fridge. Hope that helps

Thank you for the video. Since the Masontops Fermentation Kit doesnt come with jars, which jars do you recommend, so that the weight fits perfectly. Looks like the weights fit well in the jar you used. So if you could mention the jar you used in video , that would be great.

For this I used a wide mouth quart size jar. But I have used them with pint jars. Not sure if it was a Ball or Kerr jar, but brand shouldn't matter. Hope that helps.

I’ve seen people use things like rocks before. I would just make sure to boil them for a while to kill any bacteria. You could also try a cabbage leaf. Tuck it down around the sides to keep everything under the liquid.

@rosaliesemrau1293, I use a zip lock bag filled with brine. That way if the bag leaks (never) you won't alter the chemistry going on in the jar.

Smashing in a bowl looks work intensive. I would put it in a zip lock gal bag and beat it with a mallet.

You can’t ferment with vinegar. It would kill bacteria. Vinegar is for pickling, not fermenting
