In this video I am cooking an easy meatball curry, also known as muttton kofta curry. This is a delicious indian curry, ideal for when you want to entertain your guests and make an impressive curry in no time.
Ingredients
=========
1 large tomato (peeled and puree’d)
1/2 cup oil
1 tbsp ginger, garlic paste
2 tbsp coriander powder
1/2 tsp turmeric powder
1/2 tbsp cumin powder
1 tbsp kashmiri chilli powder
1 tbsp homemade garam masala powder (See below)
Salt to taste
Fresh coriander, for garnish
Squeeze of lemon, for garnish
For the homemade garam masala

1 tbsp coriander seeds
1/2 tbsp black pepper corns
2 black cardamom
2 green cardamom
4 small dry bayleaf or 2 normal size bayleaf
1/2 tbsp cumin seeds
4 whole red chilli
5 cloves
1 inch of cinnamon
For the base
__________
1 large onion
1 green chilli
2 stem and roots of coriander
For the meatballs
______________
1/2 kg mutton mince
handful of coriander
few sprigs of mint
2 green chillies
1/2 onion
1 tbsp ginger garlic paste
1 tsp of homemade garam masala
salt to taste
Method
======
* Roast the garam masala ingredients till they are aromatic and grind to make a coarse powder and keep aside.
* Grind the ingredients for the base and make a coarse paste and set aside.
* For the meatballs, in a grinder or food processor, make a coarse paste of coriander, mint, green chillies and onion. Once done, add the mince ginger garlic paste, salt and 1 tsp garam masala that was made earlier in the recipe. Now pulse everything together to mix the mince with the rest of the ingredients but don’t overdo it. Now with your palms, shape the meat balls and set aside.
* Heat oil in a pan and shallow fry and seal the meatballs for 5 minutes and once done, keep aside.
* In the same pan, in the same oil, add the base paste and sauté till golden brown. Add salt, ginger garlic paste, tomato pureé and cook till oil separates
* Add coriander, turmeric, cumin, kashmiri chilli and the homemade garam masala and mix well. Add boiling water slowly and mix to get your desired consistency and cover and cook for 10 minutes.
* Once the meatballs are cooked, add fresh coriander, squeeze of lemon and sprinkle the homemade garam masala to garnish.
* Serve hot with rice or roti. Enjoy!
