Ingredients:
For Base:
20-24 Lotus Biscoff Biscuits
4-5 tbsp Butter/ Ghee (melted)
For Cheesecake Filling:
150 g Cream Cheese
1/4 Cup Condensed Milk
2-3 tbsp Lotus Biscoff Spread
1 Lotus Biscoff Biscuit and 2 tbsp Biscoff Spread for top
Method
Method:
1. Grind 20-25 biscoff biscuits into fine crumbs and mix it with melted butter until it resembles wet sand.
2. Now place the remaining whole biscoff biscuits inside the 6 inch tart pan around the edges and press down the biscoff butter mixture onto the bottom of the pan. Place it in the refrigerator for about one hour, while you prepare for the filling.
3. In a mixing bowl, whisk together cream cheese, condensed milk and biscoff spread until it's smooth and creamy.
4. Put cheesecake filling over the set biscuit base and spread into an even layer using an spoon or spatula.
5. Refrigerate the cheesecake for at least 4-6 hours or overnight, until it's firm.
