Today's baking is "Vanilla, earl grey, choco almond sable".
I made 3 kinds of sable from one dough. ^^
This recipe is easy and very delicious~
The sable cookies in a tin case are good for special gift.
Vanilla, earl grey, choco almond sable
(Each 19 sables)
Ingredients
140g Unsalted butter
100g Powdered sugar
2 Egg yolks
147g Cake flour
27g Almond flour
1/2 tsp Vanilla bean paste
1 (2g) Earl grey tea bag
65g Cake flour
8g Cocoa powder
13g Almond flour
15g Diced roasted almond
The right amount of sugar
How to make Sable.
1. Separate the egg yolk from the white.
2. Beat the smooth butter at room temperature silky by spatula.
(The butter is pitted smoothly when pressed by finger. It's okay to use microwave slightly)
3. Add the powdered sugar and mix them until the powdered sugar is absorbed the butter absorbs the sugar.
4. Mix the yolks one by one into the mixture.
5. Place the 1/3 of the butter mixture in another bowl (for choco dough).
6. Add vanilla bean paste into the 2/3 of the butter mixture and mix (for Vanilla, Earl grey).
(In case of Vanilla extract, use 1 tsp)
7. Mix cake flour with almond flour.
8. Divide the Vanilla dough into half.
9. Put a earl grey tea bag (2g) into the half of the dough and mix.
10. Mix the sieved cake flour, cocoa powder and almond flour with the 1/3 of the butter mixture.
11. When the flour isn't seen nearly, put the diced roasted almond and mix.
(Chop almond and bake 160℃ for 6-7 minutes.)
12. Line the parchment paper and put the dough on the parchment paper.
13. Make it into cylinder shape by pushing it with palm.
14. After wrapping in the parchment paper, make the dough into a certain thickness by using ruler.
(The length of dough is about 28cm)
15. When the 3 kinds of dough are completed, let them harden in refrigerator for 2 hours.
16. After freezing, brush the dough with water.
(Too much water make sugar lump on the dough. So brush the dough with water at minimum.)
17. After spreading sugar on the parchment paper, roll the dough over the sugar.
18. Mark 1.5cm length on the dough and cut.
(Around 19 cookies are made.)
(If the bottom of dough breaks when you cut the dough, cut the dough after the dough is placed at room temperature for 10-15 minutes. You can cut the dough clearly)
19. Do panning the dough at intervals.
20. Bake 175℃ ( for 13-15 minutes.
