Note: Nesco has changed their packs, I am using the 18 pack kit, which is 1 pack flavor and 1 pack cure to 1 pound of meat. The Amazon link shows the BJ-18 Kit now has 9 packs, so now you mix 1 pack of seasoning and 1 pack of cure to 2 pounds.
This video shows the complete process of making excellent ground beef jerky using Nesco original seasoning Mix. Make quality jerky at home at a reasonable price, good for the whole family!

I do not know if you know, but is it possible to make without cure, I am on a sodium restriction from my doctor. I assume it is fine, but do not know how long it will be shelf stable without the cure.

He's a great teacher. Can you do one on homemade salami done in the oven some time. I think people would be really interested in that. I did it many years ago.

Use the paddle attachment instead of the dough hook for better mixing...

Great vid. I have heard not to store meat in the metal bowl overnight. Some say that it will create a metallic taste. I have used a plastic or glass bowl.

Good point, but I have never tasted any metal flavors from stainless steel, kitchens the world over use stainless steel, even on hot self serve steam tables in restaurants.

Stainless steel is non reactive so you won't have any problem. Just don't use aluminum or other metals.

Use Glass..You can't go wrong..Plastic and metal sux for storing food. That's why when you can..you use a Glass Jar.

I was wondering, since meat contains a lot of energy, would beef jerky be any good during a military training in the field to provide energy? I mean, it's pretty light and you can make it yourself easy.

Lutte Kikker Yeah we get beef jerky in our MRE rations but it tastes like card board. Someone is always bringing jerky to the field. Homemade jerky is where its at. Jerky is a light quick snack that does give us energy and its not hard on the stomach.

No, you can hand stir it, however I like using the stand mixer because I feel the powder packet is much more evenly mixed and you want your preservatives to cover all the meat. When I hand mix, I feel like maybe I have might have lumps of meat that did not get the powder. Just me doubting myself! Ha!

Loved your video! You never thought about using a dehydrator? Some of the new ones seem great and go up to 160F. I just wonder if it would use a lot less electricity than using an oven.

Thanks! I have a Dehydrator and it takes so much longer than the oven. So not sure about the electricity, but this type of jerky works well in the oven and most people will have an oven available.

Not going to use that much electricity because the oven heating element goes off and on, it does not stay on the whole time.

A few sources say "at room temperature" for a couple of months. The Nesco site says room temperature jerky can go rancid after about 4 weeks. I see no reason not to refrigerate until you need it for a road trip...camping etc.

If you had started in the center you could just keep going and not have to work over what you have already extruded. It would be one continuous push. When handling fresh meat of any kind you should always use gloves. I myself always use gloves because I can't stand the fat feel the meats leave on my hands. Plus it's more sanitary to use gloves.

The reason I start on the edge is, I want the strips to be more straight, so using the outer edge makes for less curve in the cured strip. I agree you should use gloves in a commercial kitchen, but this video represents my home kitchen. I don't wear gloves to eat the jerky, so for me, to wash my hands during prep is sufficient. I would love to give it a try, I really like this Nesco jerky but I am open to try a different brand of mix. I went to Amazon to order and one pack of Hi Mountain original is 13 dollars! Nesco's 13 dollar pack includes 9 Packs, sorry too rich for me. Thanks for your comments! Best wishes!

One idea, if the Nesco is too strong, then only use a half a packet, we eat ours so fast that the preservatives are not needed very much ;)
