Oh no no no no no you have to put the cheese curds on the fries and then you pour the gravy over the cheese and fries. Never add the cheese after the gravy. It’s the gravy that you pour over that will make the cheese melt which is what poutine is all about. PS I’m Canadian and grew up in Quebec which is where poutine is from. It was originally a recipe from our French Canadian Community in our one French province of Quebec. Try it my way you will see the oooie gooie difference as the cheese mixed with the gravy drips down your arm.
