It's canning season!!
In case you don't know - I not only have been milling my bread for over a decade now, but I have also been homesteading for about a decade too.
And I LOVE CANNING. It truly can be addicting.
In this video I will be reviewing the new All American Canner Model 921 in Bonnie Blue.
I will also be showing you how I like to can dried beans! Super easy!
All American Canners are THE BEST and they have been around for forever. But only recently have they come out with the Model 921 in these beautiful colors!

I also have never stored these for a crazy long time. I recommend going by typical canning guidelines or proceed at own risk. I don’t know why but dried beans canned is absolutely fabulous!! I was so shocked!! I use my chicken bone stock so that might of helped!! I highly recommend the time and effort!!!

Love the new colors. I stopped canning my beans without washing them first. Beans are so dirty! I wash them four or five times, until the water is a clear rinse.

Easy doesn’t mean it’s safe. This method is risky for creating botulism.

I did add a disclaimer stating this is not an approved method set by the powers that be. However I have personally had no issue, and am always in favor of using safe canning methods. I also have never canned dried beans and stored them long term. I believe in rotating through the stockpile!

Another reason for canning your dried beans is: if water becomes scarce. They're already cooked. Dry beans won't be much use with no water.

Are you putting 1 cup of dried beans in each pint jar or does the amount of beans vary according to whether you are canning pinto or black beans? Thank you for doing a program on canning!💗

I think I said it's just 1/2 cup dried beans in each pint jar. Goodness, I need to watch my own video again lol Either way, I don't adjust the amount for different beans.

I have noticed from trial and error for quarts 1 1/4 cup of dry beans with broth to 1 inch head space. 3/4 cup of dried beans to pint with broth. Not soaked just cleaned.

I enjoy your channel but canning dried beans is not an approved canning recipe so it is unknown if this is really a safe canning method. Also dried beans are very dirty and should be washed before using. It is your kitchen and your decision but I wouldn't want new canners to think this is safe. Love the colored 921! I have the traditional canner and it is my go to canner.

Yes there is a risk of botulism. I believe in safe canning is the best way to feed my family.

That is correct, I forgot to mention. I got this method from other big homesteading channels plus I haven’t had an issue myself. I also don’t can dried beans for long term storage. I rotate through my stockpile so if anything goes bad I’m catching it fairly quickly. You can do this with cooked beans or soaked beans as I mentioned 😀 Thanks for the input!!

I have to disagree. Go to the National Center for Home Food Preservation site and type in dried beans. It is approved and it tells you exactly how many beans per pint and for quarts.I do not use unapproved methods and I have been canning for years. I can beans regularly. Of course you always wash your dry beans and look for small pebbles. There is no more risk in canning dried beans than anything else.

Does leaving food in canner overnight alter its taste ? I keep hearing about something called flat-sour . No idea .

Yes flat sour is when you leave the food in the canner for more it needs to be in.

I have actually never heard of this. I just had some of the beans and didn’t experience any weird taste. But I also go rotate through my canned goods so nothing goes for super long periods of time.

You are right about flat sour. It won't harm your family but will ruin your entire canner load. Once your canner comes all the way down from pressure, unload it. Don't let your jars cool overnight in the canner.

@@Beachchic wow I have never heard of this. Thanks for the info. I ALWAYS remove it once the canner cools, so this is not a normal practice. I just majorly failed in prepping my canner the right way. Won't happen again!

This is not an FDA-approved method. So don't do it. I only prepare this for personal consumption because I like to live dangerously.

Either loosen the rings or remove them for storage. You want to know if you get a false seal. I just loosen mine mostly because I don’t have storage room for them. I used to completely remove the rings ( different home). Also don’t stack the jars in storage unless there’s at the ver least cardboard between them thin board is best cause mice like to chew cardboard 🙂. I usually put jars back in their box and since I cut the plastic wrap they came with (I cut three sides so I can flip the top plastic back over the sealed jars this protects from dust ). But soon the boxes deteriorate so thin boards best on top if stacking but I only stack two high I feel too much weight on bottom jar. Just some of my experience, hope it’s helpful. 😢

Excellent advice! I sometimes keep rings on sometimes off. But I am always checking the seal after a batch of dried beans totally did not seal. 😢

Gorgeous canner, congratulations. When starting with dry beans, how much headspace are you leaving at the top for the bean expansion as they soak?

You can use a flat head screwdriver between the lid and where the screw things are and barely lift up and the top will come unsealed. I have to do that everytime I use it even though I’ve put petroleum jelly around the perimeter as the instruction manual suggests.

Apparently that happens if you let it cool off too long. People typically only let it cool enough to depressurize and then open it right after. Apparently if it gets stuck you can reheat it a little and it will come right off.

I would love to get this but I live in an RV full-time at the moment and wanted to know if this would work on my oven, would you or anyone happen to know, I have never canned anything in my life so this will be a first for me, thanks!!

Can you get ‘flat sour’ leaving beans in the canner overnight? How did they taste? Just curious…. I too use this ’rebel’ method to can my beans also. Love the colored All American!! 👩‍🍳

I didn’t. But I have also been consuming these beans. They’re not meant for long term storage. I may have just gotten lucky because I had never heard of flat sour until this video lol obviously I don’t intentionally leave anything in my canner overnight. This was a mistake 🤪

Can this be used on a glass top stove?

It's what I have currently. I would say if you like your glass stove, and you want to keep it around for awhile, don't go any bigger than this canner. Also don't use it for water bath because it may add just too much weight. For me, this is the glass stove that came with my house. We plan on getting propane stove soon that can better handle all the canning anyway, so I am not planning on keeping this glass top for long.

I’ve heard you should check with whatever company your brand of stove is, before pressure or water bath canning. Otherwise, your stovetop can crack/break, depending upon the weight.

@@susanolson4486 I agree! So far, mine has been able to handle it. But, again, I plan on replacing mine with a propane stove soon anyway 🙂
