Ravani cake with semolina, yogurt and coconut
Today we make a delicious ravani, as my grandmother made it! It is fluffy and juicy and you can combine it with a scoop of ice cream!

🥣 RECIPE
Ingredients
For the syrup
1 kg of sugar
1 liter of water
2 vanillas
For the Ravani cake
6 eggs
150 g sugar
200 ml of seed oil
400 g strained yogurt
25 ml of brandy
2 vanillas
Zest of 1 orange
300 g coarse semolina
100 g self rising flour
1 baking powder
50 g coconut
Method
We start by making the syrup. Put the sugar together with the water in a saucepan to boil for 10 minutes.
Then remove from the heat and flavor with the vanillas.
We continue with the ravani cake. Beat the eggs with the sugar until fluffy. Then add the oil, yogurt and mix well. Flavor with brandy, vanillas and orange zest.
Then, add the semolina, the self-raising flour, the baking powder and work.
Finally, incorporate the grated coconut.
Spread the mixture in a buttered and 30 cm semolina pan, as shown in the video.
Bake at 180 degrees Celsius, until golden brown.
NOTE: While the dessert is hot, syrup it with cold syrup.
Our ravani is ready! Serve after 6 hours.
