You’ll love this sweet mango float cake! It’s so easy to whip up & requires No Bake. Perfect for those hot summer days.
Our version of a Mango Float or is it Mango Icebox Cake?

2-3 mangoes, cubed (or more if your mangoes are small)
2 c heavy cream
¼ tsp salt
1 c condensed milk
3 c graham cracker crumbs (divided in 2 - so 1 ½ c)
12 Tb butter, melted (divided in 2 - so 6Tb melted in 2 different bowls)
Instructions:
1. In a small bowl, add 1 ½ c graham cracker crumbs, then add 6 Tb melted butter and mix until combined. (Mix up a 2nd batch of this mixture and set aside for the 2nd layer)
2. Pour graham crackers/butter mixture into your pan and pat down firmly (we used a springform pan, but you could any pan you’d like that can go in the freezer), then chill pan in freezer.
3. Cut mangoes into cubes
4. In a new bowl, add the heavy cream and salt. Whip until stiff peaks form. Slowly mix in the condensed milk until combined.
5. Add half of the cream mixture into your chilled pan over the graham cracker layer. Top with some of the mangos.
6. Add the second batch of graham cracker/butter mixture over the mangos and pat down.
7. Add the remaining cream mixture and top it with the remaining mangoes.
8. Cover cake pan with plastic wrap and put in the freezer for 3 hours until firm.
You can eat this frozen or put into the fridge for a softer texture. We like it from the freezer and thawed for a little bit, so it’s a mix of soft and frozen! Yum!
Notes:
-you can buy graham crackers already crushed or just crush your own.
-you can switch out the whipped cream mixture for vanilla pudding! Yum!
