5 lbs (2.27 kg) high protein flour 3.75 lbs (1.7 kg) cold water 67.2 gr (2.37 oz) Sicilian sea salt 2.4 gr (0.085 oz) yeast (presumably 'Instant' (like 'SAF-Instant'), not 'Active', 'RapidRise Fast-Acting Instant' or 'Bread Machine Fast-Acting Instant' yeasts) 89.6 gr (3.16 oz) olive oil Similar recipes are by Mile Zero Kitchen and (if you speak Italian) multiple variations by Luigi Schifano, Ian Spampatti & Assia Zucchetti.
