It's great to have a good recipe to be able to make a starter discard into something tasty, and what could be better than pizza? With a recipe from the King Arthur Baking website as a base, here is an easy recipe to mix up and bake a pizza in a short time, for a great home made taste. As always, includes the recipe and descriptions of the ingredients and steps in the process. On the Sourdough Simpleton website page, there is also a link to the sauce that my wife made for this pizza.
The Sourdough Simpleton is designed for the newcomer to the world of Sourdough baking. I am a novice, myself, and am writing this from a perspective that I found hard to find as I navigated the straits of sourdough, encountering terms and techniques along the way that defied a simple explanation. Thank you, thank you, thank you for this simple easy to follow recipe. I don't know why I didn't think of parchment paper, my new stone is so ruined with stuck dough. I have so much sourdough starter in my fridge right now because I'm such a hoarder by nature, so guess what, you get a pizza, and you get a pizza. Pizza for all tonight!

Glad to be of help. I used to use corn meal, but it created such a mess in the oven that I tried the parchment paper that I use with bread. Seems like a great solution, as long as the oven temperature is under 500° or so, paper can't take extreme heat.

Did you use unfed starter discard or active starter? Watching your video, the starter appears more like active starter.

In the video, I called it "medium active" starter. It had peaked, and was not fully active - would not try to make a bread with it - but this recipe is fairly forgiving, and you can use what you have.

I found your channel and website and love it. And have printed off most of your recipes. But I recently started grinding my own grain And want to know if all your recipes would work fine with freshly ground whole wheat flour, hard or soft or red spring or winter, and especially the rye, buckwheat, and barley?

Thanks for the kind words. I have really enjoyed this venture into the world of sourdough, and will be proceeding after clearing a few things from my path over the next month or two. I don't see why any wheat that you use would not work. You may need to adjust the amount of water, or time to rise, but that is so with any sourdough recipe that you modify -- and we modify most of them! Pleases do keep in touch with your delicious progress.

Hi Mark I made your sourdough discard pizza crust tonight and I have some suggestions for you. The crust was heavy and dry. I would suggest a couple of tablespoons of olive oil. The result will make the world of difference. I make your sourdough rye bread and it was delicious.

Thanks for the comments. Just made the pizza dough last night, and not heavy at all. I thought about adding some oil, but really did not need it. It may depend on the hydration of the starter, along with all those other variables that make sourdough the unique passion that it is. Glad you like the rye bread, have received lots of nice comments about it.

Sure, no problem. I've even made the dough and frozen it for later use. Then, just defrost, let it rise and proceed with baking. Thanks for the question, and please subscribe to this channel if you've not already.

You can use a bread machine if you can stop it from doing a first proof, which is likely too warm for sourdough. A sturdy stand mixer works well, and it can proof at room temperature.

As you can see by the photo posted along with the adding of the starter, this was old, inactive starter with hooch on top. Inactive starter is another term for "discard."
