The first time I went to Spain I fell in love with all the food, in particular with the Gabillas al ajo. I asked for the recipe. I haven been cooking Gambas al ajo here in the USA and people really like them (not to brag). My family and I went to Spain in Feb/March (just before the Pandemic). IWe went to some of the restaurants that you recommended (incluyendo El Botin por su puesto). We order many different tapas except Gambas al ajillo, since I claim I make them just as delicious. I have never use vino blanco, however I will next time I make them.. Stay strong Spain during this difficult time. We are all in this together. Salutations from, USA.

I love Casa Alberto. That place is Madrid in a nutshell. I actually prefer eating in the small bar rather than the restaurant at the back. I know some other very good places in the centre but off the radar if you're interested. Cheers. WT

Great work.. I have only missed a clay pot insteed of your famous pan, but not everybody has one at home. Clay pot is used to keep the shrimps hot longer as they get cold really fast once out of the pan.

Kia ora James - big fan of your videos! I'm a fellow Kiwi with a Spanish partner. We used to live in Spain together, but for the last few years have been living back here in New Zealand. Two of the things I miss the most are croquetas de l'avia and romesco sauce. I'd love to see a video of either of those if you happen to know a good recipe!

Probablemente, la mayoría de las personas que usan esa palabra para referirse a alguien "bueno en algo" no se plantean el significado que tiene en el idioma original, o de donde proviene esa palabra en sí. It's a great dish and James does it justice. The fresher the prawns the better. The fino is absolutely the key that makes this a great Spanish dish. If it was white wine it could be Italian and mixed with pasta. Fino and seafood is a marriage made in heaven. All mopped up with good bread. Delicious. I'd be cooking it this week in my little place in Andalusia, where it's special, but I'm stuck elsewhere. I'll raise a glass to James and Yoli.

FYI- it’s CHILE not CHILLI or it would have a different pronunciation with the double L’s, at least for the Spaniards who came from Spain 300-400 yrs ago with the Conquistadores & settled in New Mexico, US. To pronounce it as you have spelled it would be the Anglo pronunciation or if you are being lazy all American, lol (which we all do a lot!). Really love your videos, you two have such great chemistry!

Tip James for drying wet parsley. Take the washed, wet parsley, cilantro or any herb. Place it in the middle of a clean tea towel. Grab the four corners of the towel and give is a good, vigorous swing and shake. Works good too for washed lettuce, if you don't have a spinner on-hand.

One of my favorite dishes...I have tried it in Barcelona, la caruna,lanzarote, Santander & many places in spain ...but best gambas al ajilo was in tenerife (canary islands)authentic.. perfect gambas...perfect spice & sizzle to the dish...I'm in Mumbai now but still miss it....the dish u made missed the sizzle...when u get gambas all ajilo on ur table it is full of sizzles.... Anyways enjoy watching your videos

You can also use the shrimp shells to infuse the oil. Works best with raw shrimps but precooked are fine.

Love the bit about 'no such word in Spanish for remove veins'!....gross though if you don't. I live in the East Algarve (just over the border from Ayamonte) and the dish is almost the same (Camarão con alho) except they add some paprika so it has a more reddish look to it. This is a throwback to their past connections with India. They would also sprinkle some coriander on top which I don't think is so popular in Spain. Probably the best dish in all of Portugal is 'Arroz de Tamboril'....monk-fish with rice which also includes local 'camarao' and 'Amejoas'; delicious small clams.

Pil pil is more a Basque term for a sauce made from oil, chilli and garlic. The best version of pil pil is when made with cod . When it's cooked slowly , like you would a confit, you can emulsify the sauce. It's absolutley incredible .

In India everyone is used to heavy spices ... so when we go to any western style place where the shrimp/prawns in garlic and olive oil are only steamed or cooked for a little bit of time ... like in this video here ... the waiter will always make it a point to tell you this and will also tell you that there might be a little bit of a fishy smell to the prawns because of this. :)

In Malaga we make prawns al PIL PIL, in the pan we put olive oil, a lot of finely chopped garlic, paprika (which gives them a good color and flavor), a lot of parsley and the peeled prawns, it is not the same as prawns al ajillo

Hi James, have to say I love your films about the food over in Spain. I have been to Spain and found it very difficult trying to eat out. If you don’t talk a word of Spanish most of the time you just get ignored as soon as you say hello. Then trying to ask for something well they just stare at you. If you can speak Spanish, I am sure it’s great but me and the wife did not enjoy it at all.

All previous comments are wrong - with all due respect. It has to be lightly chilled fino or manzanilla. This is a great simple dish and should be accompanied with something similar. Posh white wine with garlic and chilli? Na. This is a dish of the sea and the drink should enhance that. Fino or manzanilla (superb value for money) is salty and tangy and the ultimate enhancer of seafood. (A great secret of Andalusia.)
