The problem with teaching only algorithms is that you do not understand why they work. In this case, you are multiplying the numerator and denominator of each fraction by the denominator of the opposite fraction.

He multiplied the fraction on the right (1/4) by 5. This is just so that each fraction has a common denominator (bottom number) which makes it easy to solve.

7 7/10 and 2 6/12 must be converted to improper fractions like this 77/10 - 30/12 then multiply the numerator and denominator of the first fraction by the denominator of the second fraction, do the same thing with the second fraction acting in reverse like this 12*77/12*10 - 30*10/12*10 = 924/120 - 300/120 = 624/120 both the numerator and denominator of the resultant fraction can be decreased by a factor of 24 as such 624/24 : 120/24 = 26/5 then turn it back into a mixed number 5 1/5.
