Just gotta respect what Lucas is doing and how much he's been grinding ahead of the many influencers/chefs we see out there. Someone who knows his roots/classics very well but also is adapting to the new methods of cooking. His growth over the few years has been fantastic! Always excited to watch his content.

Went there 2 weeks ago for my first lunch in Tokyo and sat at the exact same spot as Lucas. We were transported so out of this world that both my friend and I forgot our backpacks at the restaurant. The host lady chased us down 3 blocks, carrying our backpacks with her kimono and wooden shoes effortlessly like a champ. Shout out to the entire hospitality team at Udatsu. And thanks, Lucas, for articulating your experience so nicely. I still struggle to make an adequate Instagram post to explain what happened after 2 weeks.

Love when chefs attempt to convey tastes and textures. " It so amazing to walk into an omalase sushi gen with soooo much serenity and start it off with a texture that as westernerner yet still genetically an Asian I expected a kind of flavor which transcended texture and doubled down on true essence of sushi flavor. Great omakase is difficult to describe. Even this host is having trouble! The best description I can think of is his: it just melts away into this flavor immersion.
