This does have the look of sweet bread. The sandy, yet moist inner texture, the strong crust and, You're right, the rough top crust. I was shocked though, about the cheese. Ate a lot of sweet bread in my youth but never came across any with cheese. I think that part's weird.

That might have been a mistake, it should be teaspoon. But I made this recipe recently and I am almost sure I followed it to the letter and got perfect results. Will have to double-check to confirm

"tablespoons" was an error, it's actually teaspoons but salt is very important when making any type of dessert as it accentuates the different flavors being used in the dish.

I don't know what style of sweet bread you're trying to reproduce. I suspect it's Trinidadian, due to your accent. I'm familiar with traditional style Barbadian sweet bread and it did not have any of those hideous mixed fruits and maras. cherries that they are putting in the bread nowadays, according to what I have been seeing online. This is almost traumatic. Thank you for not putting that crap in your bread!
