The problem with a menu that big is that most of the stuff almost for sure isn't fresh as you want it to be.

The worst thing to me is lasagna with a flavorless and/or watery tomato sauce. I wouldn't be surprised if that food was heated up from frozen considering that the menu is so big. I mean, I know it's a diner but I believe they would do better with a smaller menu. That way, they could make most if not all items from scratch like they should be.

Daym brother, I think a lot of the commentators mentioning the large menu are correct. I've been working in restaurant service for 12 years and never in my life have seen any menu that big except when I worked in commercial catering which is very different things that are prepped days ahead and the fresh meat is used with proper timing for very specific orders. Anyway, still a great video as usual my brother. 🙂🙂🙂

WTF, that menu is SCARY. When a menu is that large, there is no way in hell that the food at this joint is fresh. They need to eliminate the menu to half the size (if not more) and perfect ~20 items that will keep people coming back. And choose dishes with ingredients that can be used in just more than one dish. The items you can't perfect are only giving your establishment a bad name, so take 'em off! One of the best lasagna's I've ever had didn't have Ricotta in it, but with a Béchamel. It was actually a "green" lasagna (noodle was green) that came from the Cheesecake Factory. I would totally lather the Béchamel all over my body; it was that good.

Just as a general rule, you don't go to a diner and expect to get great Italian food. you just don't. Diner's are great for straight up American eats like Burgers & Chops etc...Also, they are really good for Greek food as well, as a lot of diners in the tri-state area are Greek owned. So dishes like Gyros & Pastitsio are gonna be killer at a diner. Lasagna, not so much.

That lasagna was visually undercooked. The cheese wasn't fully melted. The sauce hadn't soaked into the pasta. It looks like and individual portion that was quickly stuck in the oven. Real lasagna takes 60-120 minutes to cook properly, so that everything intermingles.
