I think "Cháo Canh" is a kind of porridge of many toppings inside like ribs, dry prawn,... and the brown colour made by dropping the pig blood in, "Bì" is the processed pig skin! ^ And you can try dipping many of those dishes in chilli sauce for better flavour next time!

In the North, we call it 'Nem bùi,' but 'Nem nướng' (this is a modified cooking method). It is very common in many northern provinces, and we actually eat it every week with rice + lá sung

@ewirhigfj thanks for sharing! there seems to be a lot of different variations, we also know it as nem tré (fresh version). maybe the correct name should be nem tré nuong or nem bùi nuong! oh wow, that's so interesting, we thought it was honestly a drinking food 😆

The pork wrapped in banana leaves (and another kind of leaf - guava leaf) is either tré or trưởi. Not normal nem chua.
