Take atta, suji, ghee and water to make a stiff dough. Create muthias and fry them in oil till they are brown. Cool and grind the muthias. Pass them through the sieve and add ghee, dry fruits, cardamom powder and sugar to this. Choorma is ready to eat. For the dal pressure cook mix dal (I use red masoor, dhuli urad and chane ki dal). For the tadka heat oil and khada masala (laung, sookhi lal mirch, kali mirch, tez patta,, dalchini, jeera and hing). Add onion and green chillies. Saute and then add tomatoes and ginger garlic paste. Cook this mixture. Add coriander powder, turmeric powder, chili powder and garam masala. Add boiled dal to this. Add lemon juice to it. Dal is ready. For the baati knead atta, suji, ghee, salt and baking soda. Add yogurt to make a semi stiff dough. Preheat the oven to 175 degrees for 15 minutes. Make balls from the dough, flatten then and make an indentation with your thumb. Bake them in the oven for 30-40 mins till they turn golden brown. Crack the baatis while they are still warm and dip them in ghee. Enjoy the dal baati churma

Ingredients: For Dal 1/4cup chana dal (split gram) 1/4 cup toor dal 1/4 cup moong dal (split with skin) 1/4 cup urad dal (split black lentil with skin) 1/4 teaspoon turmeric (haldi) 2 teaspoon ginger grated 1-1/2 teaspoons salt 1 teaspoon coriander powder (dhania) 2 teaspoon mango powder (amchoor) 1/2 teaspoon garam masala For seasoning 3 tablespoons clarified butter (ghee) 1 teaspoon cumin seeds 1/8 teaspoon asafetida (hing) 1/2 teaspoon chili powder 2 dried red chili broken in pieces For Bati 1 cup whole wheat flour (roti ka atta) 1/4 cup fine sooji (semolina) 1/8 teaspoon baking powder 1/2 teaspoon salt 1/4 cup clarified butter (ghee) 1/2 cup milk use as needed For serving About 1/4 cup hot clarify butter (ghee) Method Combine all dals, wash changing water few times. In a pressure cooker add dal with 4 cups of water, salt, turmeric, coriander powder, and ginger, cook on medium high. After pressure cooker start steaming lower the heat to medium and cook for about eight minutes. Turn off the heat; wait until all the steam has escaped before opening the cooker. Dal should be soft and mushy, consistency of the pourable batter, if needed add hot water. The consistency of the dal will thicken over time. Add garam masala and amchoor, mix it well. Heat ghee in a small saucepan for seasoning; after ghee is moderately hot add cumin seeds as they crack add asafetida, red chilies and red chili powder. Stir for a few seconds. To prevent the spices from burning, you may add 1 teaspoon of water. Pour spiced Chaunk over dhal. Mix it well and let it simmer for two to three minutes. Dal is ready. For the Bati Preheat the oven to 350 degree F. In a mixing bowl mix all the dry ingredients together, flour, sooji, salt and baking soda. Add the ghee and mix with fingers, add the milk as need to make firm dough, knead the dough well. Set aside for about 10 minutes. Divide the dough into 8 equal parts and roll them into balls. They will not be very smooth dough ball and will have cracks all over; this will help them to cook all the way through. Arrange the batis over cookie sheet about one inch apart and place the pan on middle oven rack and bake at 350 degree F in a preheated oven for 25 minutes. Turn them over and bake for another 30 minutes until batis are golden brown all around. Break one bati from one side to make sure they have cooked through. How to Serve Break the bati into two pieces and pour about one teaspoon of hot melted ghee over and serve with bowl of hot dal. If you have baked the batties earlier heat the batties in oven for about 10 minutes. Enjoy!

Grind the solid pieces again and pass it through the sieve again. You may need to follow this step for a couple of times to get the perfect texture. Well to make the baatis since we don't have tandoor at home we usually do dhungar which is basically putting ghee over lit coal and placing it in between the dish and covering it so as the it inhales all the smokey flavour. For Making dal we use a lot of ghee and mustard oil mixed together for literally frying the spices so as to maximise the flavour. And at the end for the extra zing lemon juice does wonders. So that's my version !!!

Here's the recipe for daal baati 1.Make stiff dough with the atta, soojee, 3 tbsp ghee, salt and milk. Keep covered for 15 minutes. 2.Make the filling: heat the ghee and add jeera and heeng. Stir a few times and add the ginger. 3.When slightly brown, add the peas, dhania, garam masala, chilli powder, salt and amchoor. 4.Cook till tender and cool. 5.Shape dough into flat rounds, fill with peas' filling, cover and form into round balls. 6.Bake in a pre-heated oven for 45-50 minutes 10 minutes at 375 F, then lower the temperature to 350 F, till brown and crusty (if not brown on top, turn upside down and bake another 10 minutes. 7.Remove from oven and dip into ghee, and transfer onto a serving dish. For Choorma Mix flour and semolina in a bowl. Add half cup of melted ghee and mix well. ... Divide the dough into twelve lemon sized balls. ... Drain and place on an absorbent paper and cool. ... Add powdered sugar, cardamom powder, cashewnuts, almonds and raisins and mix. for daal rinse and soak the lentils for an hour. ... add 2 cups water, onion, turmeric and ginger. add a few drops of oil as this reduces the frothing in the lentils. stir and cover and cook the lentils. bring to a boil and then simmer till the lentils are cooked really well.

EASY , BALANCED AND HEALTHY RECIPE FROM MY SWEET MOM. Firstly for preparing the baatis, take a glass bowl and add wheat flour with rawa, salt and desi ghee. With your hands, make a very stiff dough with warm water. Cut out circular balls from the dough. Meanwhile, heat a gas tandoor and roast the dough balls on low heat for sometime. It should be little brown and crusty. Then open the balls from the top and pour some fresh desi ghee in it. Then to prepare the daal, wash both the dals together add 1 cup water. and a pinch of turmeric powder. Pressure cook the dals till 2 whistles. Allow the cooker to cool and remove the dal. Mix all the spice powders like salt, read chilli, corinder powder, turmeric, in 1/2 cup water to make thin paste. Put ghee in a pan over medium flame, add the cumin and coriander seeds. When they get some brown color add ginger. Then add the paste of spice powders and fry for a minute, add the cooked dal. Then add the remaining water and stir well. Bring it to a boil. We can add soe lemon if someone wants some extra citric flavour. Garnish with chopped fresh coriander. Serve hot with freshly prepared baatis and serve it hot with daal.

Churma :-Combine the whole wheat flour, semolina and melted ghee in a deep bowl and mix well. Add about ¼ cup of water and knead well to make a stiff dough. Divide the dough into 10 equal small balls. The shape we are making is called muthias. Now take a dough ball in your palm and shape in the shape of your fist and press with your fingers in the center of each portion.Heat the oil and fry the muthias at low heat until they are golden brown in color from all the sides. Frying muthias will take a long time. Drain on an absorbent paper and allow them to cool. Grind the fried dough shapes in a blender into a fine powder.Pass it through the sieve to get a fine mixture. Grind the solid pieces again and pass it through the sieve again. You may need to follow this step for a couple of times to get the perfect texture. Add melted ghee, almonds, almonds, cardamom powder, and powdered sugar and mix well and set aside. Chruma is ready. For dal:-Wash all the dals, and add to a pressure cooker. Add salt and 5 cups of water, turmeric powder and mix well. Pressure cook for 4-5 whistles. Allow the steam to escape before opening the lid. Heat the oil/ghee in a pan. Add the cloves, dried red chili, green cardamom, black cardamom, bay leaf, cinnamon stick, cumin seeds and asafetida. Sauté for a few seconds. When the seeds crackle, add onion and chopped chilies. Saute for 3 minutes. Add the tomatoes and ginger garlic paste. Saute for 2-3 minutes. Now add coriander powder, turmeric powder, chilli powder and garam masala along with 3 tbsp of water and mix well. Add some more salt, if needed.Cook on a medium flame for 3-4 minutes. Stir occasionally. Add this tempering to the cooked dal and mix well. Cook on a medium flame for 2 to 3 minutes. Remove from heat. Add lemon juice and mix well. Keep aside. Dal is ready. For baati:-Preheat oven at 175°C/ 350. Add wheat flour, semolina, ghee, salt and baking to a large mixing bowl.Mix well and add yogurt to it. Mix well to knead into a semi-stiff dough. Use 2-3 tbsp or more warm water, if needed. Divide the dough into 10-12 equal portions and shape each portion into a ball. Flatten the ball, make a small indentation in the center of the dough balls using your thumb. Keep aside. Arrange baatis in a baking tray.Bake for 30-40 mins or until they top turn golden brown. Use a kitchen towel and press hot baati slightly with your palm. Don’t press it so hard, we just want to crack them slightly.Soak cracked baatis in ghee for few seconds, and drain on an absorbent paper. Keep aside. Baatis are ready.

My favourites version of Dal Batti churma is as simple as asking my mom to cook it for me! I would really want to appreciate Neha and her team for putting in so much of love, affection and hard work in all they are doing. It’s truly incredible and so eye pleasing to simply sit in your couch while these guys take you to beautiful places and through the lesser known artists of the kitchen ! Long way to go !!
