I did the speedrun mostly without save scumming. You do need to get 1 golden sugar lump, which I save scummed for, but you can get all the sugar lumps you need from the garden.

I did it and I played plenty of things other than cookie clicker. The 1 year achievement triggers after it has been a year sense you started playing, not after you have a year of playtime.

As a cookie clicker expert, with ALOT of strats. You can get all achievements in either 1 week or 4 days. Also all achievements legit within a year is definitely feasible not almost impossible

Damn I'm about 90 days into doing this exact idea. Currently I just need 2 cookies baked all time achievements, the last 2 golden cookie ones, a handful of level 10 building ones, and the one for playing for a year. That'll be every achievement and shadow achievement except for the 2 explicitly cheated ones. In terms of cheaty-ness, I've been using a macro to get a golden lump with 7 every time, a good chunk of savescumming elsewhere generally, and a basic autoclicker.

Also the garden achievements and the achievments all the building achievments for buildings besides the sugar lump ones are trivial, not sure why you even mentioned them, and not achivements like getting a shiny wrinkler.

Took me about 3 months. Because there's a glitch for the timed one where you can log in then change the time and then you get sugar lumps and beat the time change. Also one guy doesn't make the rules for a speed run.
