One thing hat can help and don’t see nearly often enough in the US is different crank arm lengths. They’re often 170, sometimes 175mm, with 172.5mm occasionally thrown in on road bikes. Bike fitters pay attention to leg extension, but they ignore the knee flexure when the pedal is at its closest point. For people with knee issues, this is as, or more important than leg extension, as they either feel pain with this much flexure or have great difficult exerting force from this point. I had to get a youth MTB that came with 162.5mm crank arms for my wife to alleviate knee pain when she rides. More crank arm lengths should be available, and probably should come with the smallest frames offered by brands. At the other end, XL frames should probably come with 172.5 or 175mm crank arms.

most people who ride ebikes would not benefit from the typical bike fit of someone who rides road bikes. They don't need or care for the most efficient pedal stroke, usually sit too low, don't consider stack height or aerodynamics etc. We cannot even get a hollowtech style bottom bracket to upgrade most ebikes to a modern groupset. Adjustable stems are dumb. Get the right size, but on the Euphree, you cannot even do that because they have a weird proprietary one with internal cable routing built in so you are stuck with it.
