New Orleans is an old city, and a lot of the same people who settled in NY settled in the then swamps that became New Orleans. Mostly has to do with ancestry. Cajun mostly comes from the Acadiana people: France then Holland then New Foundland then Louisiana. There are many cajun dialects depending on where you're talking about: Lafayette, Cutoff, Thibodaux, Morgan City, Vacherie, etc. Creole is more French, African-American, Native-American ancestry mix. Whereas Cajuns have their own take on the French language, Creole is another language altogether. One hot topic between the two cultures is the "correct" way to cook jambalaya. Creole chefs usually use tomatoes in the dish where Cajuns may not (Creole calls that "just dirty rice"). There's many more differences; but if you search for "Cajun vs. Creole," you'll get a bunch.

Good post above, but don’t forget about location. OP, Don’t get it mixed up. NOLA is not a Cajun city. It is the largest, most popular city in that area, but it’s nowhere near Cajun. You have to get south and west of Baton Rouge to get into Cajun territory. There’s a lot of change between New Orleans, Baton Rouge, Opelousas, and Lake Charles. They’re hours apart and geographically ‘southern’ Louisiana, but they’re their own distinct areas. I left out Alexandria and anything north of there but there’s a good reason - that’s just Far East Texas.
