I just started at dominoes i have made pizzas before but dominoes is completly different my manager id ana amazing guy and had tought me the best way he can but i havent been able to get slapping down yet and these videos have helped me so much i have realized bad techniques that you even tlak about in yhese videos

Great tip, Andrew! I was getting the thumbs all downwards while stretching, you helped out on that one man! Thanks. A quick question: In Dominos- After the dough is taken out of the mixer- do you keep it to rest, or quickly cut and ball it, then leave it to rest, then proof in walkin. Also, do you add any oil rub on the dough ball? Also, how long should i rest the dough ball ? (assuming its the latter, wherein i cut and ball immediately after taking the dough out of the mixer). What's the perfect time required for proofing in walk-in ? 2 days? or 36 hours? Thanks a ton Andrew!
