I like to eat healthily. Diabetes runs in my family. My friends love this cake. When they do invitations to their house they want me to always bring cake and they fight for the leftovers. So they decided that the leftovers stay at the house the party was done. Now they fight for where the party is going to be done so they can stay with the leftovers..lol

Yum!! We are a keto/low carb family and for my birthday this year I really wanted to make a lemon blueberry cake and a chocolate cake with chocolate fudge frosting. I was thinking about making regular cakes but came across your video. I’m going to have to give this a try. Are you absolutely recommending the cakes to sit overnight in the fridge??

I always let my cakes rest overnight but I will say that with almond flour you want to make sure that the cake is completely at room temperature because it doesn't taste the same when is hot. Letting them rest over night ensures that the cake is moist and all the flavors set.

I plan on making this for my birthday cake. I’m doing keto plus I can’t have grains. I think I’ll add some freeze dried raspberry powder to it and have lemon curd and lemon mousse filling. 🎂

Made it and it came out great. Did come out a little flat but my butter was kinda melted. That was my fault lol. Tasted great and my 2 year old son loves it.

Make sure that the baking powder is fresh and also make sure that you place this in the oven as soon as it's mixed. I have made it many times and it always rises well. Glad you liked it!

Thank you Edna for your recipes. Your instructions are so clear and precise. My questions are can you freeze keto cakes? Does it maintain its texture and flavor? Also can you add a "keto syrup" to give it some moisture but not ruin the texture or grain? Looking forward to your comments.

I haven't put one in the freezer so I can't answer that. I know I cool them down in the refrigerator but like with any butter cake, they tend to get hard, and as soon as they are at room temperature they soften. The cake is moist and doesn't need simple syrup unless you want to add flavor but I haven't added that either to it. This one is just delicious like this. Maybe I will test it next time. lol

It's really moist so it doesn't really need. But if you want to add some extra flavor you can test it. I haven't tested adding simple syrup to this one yet.

I haven't tried it with normal sugar but I don't see why not. If you. use granulated sugar, mix it with the butter and cream it really well instead. You can double the batch if you want as long as your mixer can handle it.

Edna, your cakes are wonderful! Is it possible to make this cake just vanilla without lemon? I was not sure whether the lemon might be covering up an unpleasant taste, or not. Could I leave out the lemon and add extra vanilla or a butter extract?

Hello, This looks delicious. You said Extra Large eggs the recipe just says eggs also I'm using 3 inch 8 x 2 round cake pans would this recipe be enough or should I double the recipe also what oven temp and how long should I cook the cakes. Thank you for all your helpful videos

Thanks, I will fix that on the website. I tend to use jumbo eggs or large cakes when baking. As for the pans, if you double the recipe you might have leftover batter. I haven't tested this one on 8-inch pans yet.

Hello Edna. The first time I made this it came out perfect, the next 2 times I made it the liquid batter seems to curd. Once I add the lemon zest & extract it seems. Am I doing something wrong? This didn’t happen the first time. Your batter seems so smooth. Mine is not.

Make sure the ingredients are at room temperature. For example, if you add cold eggs to butter it will cool the butter and that can happen.

I usually do the 6-inch for me and my family. It depends how big you cut the slices but at least that serves 12. You might have to double it for an 8-inch pan. I haven't tested this so I am guessing.

Is not regular powdered sugar. Swerve is a sugar substitute that doesn't raise insulin.
