Net Asset Value of a Mutual Fund

So how does the open end mutual fund price ever change? When shares are sold/redeemed are shares outstanding lowered? Using your example, say we sell/redeem back the 300 shares of the mutual fund, is there now 20K shares, or still 20,300?
