Because we human beings like to see things organized. For example, sometimes we want to see our files arranged from most recent to oldest, to see KZbin videos arranged from most views to least views, to order our work cited in alphabetical order, to arrange words in the dictionary from alphabetical order, etc. Not everything needs to be sorted, let alone all numbers - sometimes we don't care if numbers or things are unsorted; it sometimes doesn't matter. However, since we human beings sometimes care (and it seems to be something that people want to have in many different applications), then it is necessary to solve this problem. That's why researchers went to work on solving this problem. That's why we have sorting algorithms - researchers published results on which algorithms work best. It's really cool!
