Chef, you are giving us simple recipes that actually are easy to make and taste great. Many thanks. Also, I prefer a bit of ginger and touch of white pepper when I am making this soup. At the table I often add a small amount of Chinese mustard.

I like this one over many of the other recipes that called for 2 to 3 time more cornstarch, I don't like it so heavy. The sugar and sesame oil makes sense too, a little bit of either in certain asian recipes really adds to depth of flavor. I love to cook, I'm pretty well versed in classic french cookery, I love it all, but I got way too fat, especially with all the butter and cream based sauces, I've switched to asian cooking plus big time exercise commitment, I've lost 20 lbs in the first month, but many more to go yet. I also go pretty light on the rice, I use bean thread noodles more. Off to the kitchen, soup and salad for my lunch/dinner.

Corn starch just thickens the soup so if you're fine with it being liquidy by all means.

Hi, It can be replaced with flour, arrowroot, potato starch, or tapioca starch. Use three tablespoons of flour for every one tablespoon of cornstarch. Adjust the thickness of the soup to your preference.

Hi, I have been using Swanson's Chicken Cooking Stock. Recently a friend recommended Kitchen Basics Natural Chicken Stock and I found it less salty and flavorful. Both are good. Stored-bought chicken broth is handy when you are too busy to make your own. I use it frequently from soups to stir-fries.

I tried this and ended up with what looked like egg slop soup. Instead of having those beautiful ribbons of egg, it looked like clambered milk. Someone please tell me what I did wrong. Thank you.
