When I was a kid, my father and his buddies would be in charge of making THE EGG NOG. They would mix all the non alcohol stuff in a big tupperware pitcher, then take out two cups and put it aside. Then they would put in the booze a little at a time. They then would have me and another kid take small tastes until we could taste the booze. When we could taste the booze they stopped adding alcohol and then poured the two cups of un adulterated nog back in. THAT was the secret to holiday cheer. YOU.ARE.WELCOME.

Buzzballz has two product lines: the "Chillers" that are made with other-than-standard orange wine (so they can be sold at stores that can sell beer and wine, but not distilled spirits), and the normal Buzzballz that are made with actual liquor. Other-than-standard orange wine is a mostly neutral tasting fermented product produced around 20-24% ABV made from oranges and sold primarily for blending and mixing in RTD cocktails.
@juneguts2 күн бұрын

Wait, "orange wine" is made from oranges? I always thought it just had something to do with color. I'm kind of intrigued. Are there any bottled to be drunk orange wines fairly readily available?
@Default783342 күн бұрын
@@scaper8 There is "orange wine" that is basically made from white wine grapes using red wine technique and is commonly associated with the nation of Georgia. There is also "orange wine" that is made from oranges. Other-than-standard orange wine is a common way to get rid of surplus oranges that can't be sold for eating or for juice production. "Standard" orange wine would be wine made from fermented oranges, produced at "normal" alcohol levels, and generally retaining the character of the oranges used to make it. You can occasionally find it made by local wineries that also make berry wines.

Be wary of any product on the shelf that they know is typically only going to be a one-time purchase. They have no incentive to make sure it's a quality experience if the results are a one-time purchase regardless. I've had too many nutmeg bombs claiming to be pumpkin spice to even bother with that stuff anymore.

As someone trapped in the Southern Hemisphere (where it's mid-summer) and specifically South Africa, I might explore how to make a "lite-nog" (i.e. something not overbearingly thick and creamy) featuring Amarula. In case you've never encountered it, Amarula is basically Bailey's with a little (and I mean, just the slightest) bit of a fruity edge. It's a cream liqueur made from fermented marula fruit, a native tree that famously "masts" (i.e. seasonally produces fruit in massive quantities) and animals supposedly eat the over-ripe fruit and get drunk off the fermentation. The Saffers go on about it like it's God's milk itself; personally I think it's okay. Well worth a try if you've never but not a go-to. If Greg or anyone can come up with an idea that incorporates it, I'm all ears.

Chef’Store (a restaurant supply store open to the public) carries pasteurized cage-free egg yolks in quart cartons, perfect for eggnog. They are meant for restaurants making custards, pastry creams, mayonnaise from scratch, hollandaise, etc. Pasteurized at low temperature so you don’t have to worry about the minimal risk of food-borne illness with raw eggs, and I can’t tell the difference between these yolks and those from unpasteurized shell eggs. You can pasteurize them yourself with a sous vide setup, but it is a PIA, and these are only $6.99 a quart, which which would cost $32-$64 in regular shell eggs near me. And I’d end up throwing out the whites, so this is lest wasteful. There’s just no way I’d make that many sours, and I’m not really into them this time of year. They do have pasteurized whole eggs for $5.19/qt, but I don’t think egg whites bring anything to the table in eggnog. I use Alton Brown’s recipe currently, which calls for yolks only. I make custard and stick-blender mayo with any leftover yolks.
