Once I used a bunch of egg whites to make cream and had like 10 yolks left over. I didn't want to waste so I scrambled them for breakfast one day and I gotta say, what a breakthrough. While they aren't the healthier half, I loved it. I ate em for breakfast until I used em all, which only took 3 days. I made the really fluffy as opposed to rich and creamy. I definitely gotta try em this way.

I started doing essentially this by accident, I would be lazy and not want to use another bowl, so would dump my cooked eggs back into the bowl I whisked in. If you add cheese with/right before the yolk it should melt into the sort of sauce it makes. I havent done it exactly this way but i have dome it where i added it to the last remaining slightly thickened runny egg in making scrambled eggs normally, im sure itd work only issue is maybe that the yolk cools things down and you dont want to cook it too much after its added. A little rosemary in the butter and some cheddar near the end is how i was doing it before(i keep forgetting the rosemary)
@walterw24 ай бұрын
took me a minute, i thought i would be left with excess yolk or white but no i'm still using all the eggs i'm going to use, this trick is entirely about cooking the yolks less! that's always the goal with eggs isn't it? whites done and yolks still sauce-y? awesome, i shall be trying it
@Gruuvin14 ай бұрын
Been doing this for years but it's MUCH simpler than his method. Just crack all your eggs into the pan and don't break the yolks while you gently stir... maybe let one or two break in the beginning... but wait until close to the end of the cook when you finish breaking all the yolks. You don't need to violently stir eggs and you don't need extra bowls.
