For me Summer means Mangoes and baking with them! I'll be sharing lots of mango desserts with you guys this season and I'm starting with this simple eggless fresh mango cake recipe with cream cheese cardamon frosting.
What I love about this recipe is that you can make this cake without eggs, no condensed milk, no yogurt or any of the usual suspects. The cake is soft and delicious and packed with the flavour of fresh mangoes. The frosting and the mango rose on top just make this cake extra special

INGREDIENTS-
2 cups maida
2 tsp baking powder
1/2 tsp baking soda
1/2 cup vegetable oil
1 cup caster sugar
1 cup mango purée
1 tsp vanilla extract
1/4 cup milk, at room temperature
Frosting :
1 cup cream cheese, softened
1/2 cup butter, softened
1 tsp vanilla extract
1/4 tsp cardamom powder
1+ 1/2 cup icing sugar

Tried this cake today (single tier) for a special occasion. Came out well. Used readymade mango pulp and halved the sugar quantity. But had to add extra milk to make the batter less dense. And took nearly 45 mins to bake completely. I used vanilla frosting on top. Thank you!
