I am by no means a chef, but I am a pretty good home cook. And I owe it all to Emeril. I didn't learn everything I know from him, but much of it. But, beyond that, it was watching his show back in the day with the late great Doc Gibbs that made me want to learn how to cook. Thank you, Emeril for your skills and your motivation.

Fully agree to the other comments! Emeril Live was the only show we watched in the late 90s. He encouraged me to cook more and better. And I still use some of his “phrases” in my daily cooking live. Like “WHATEVER TOU USE TO THICKEN IT, IT WILL NEVER COME TO IT’S THICKENING POWER UNTIL YOU BRING IT TO A BOIL. Stuck with me and has already been given to the next generation.

Chef, you are a treasure. You inspired me to cook. This small crowd format is where your energy and talents shine so bright. Please go back to more of this. Dont listen to those around you that say otherwise - the numbers dont lie. If you had me in your kitchen, I would cook your rock shrimp stuffed filet with twice baked andouille stuffed potatoes. I miss Emeril teaching the world to cook with gas nobs, spices, and technique. Garlic, butter, pork fat, and BAM. Before everything went to competitions and secret ingredients or screaming at everyone.
