My girlfriend & I decided to go for cuisine we haven't tried yet (We like to explore foods around the world). I've got to say, that this recipe is fantastic & the taste was great! We only used fresh minced garlic instead of the frozen one (We also took one tbs. of veg. power instead of a cube). Thanks a lot for the fantastic recipe my neighboring friend across the boarder. For everyone having a problem with this recipe not turning out perfectly, that isn't just long grain rice she's using, it's long grain PARBOILED rice, and it cooks very differently from regular long grain rice and has a unique texture to it. If you've ever seen Uncle Ben's Converted Rice, that is also parboiled rice; they just got a registered trademark for the use of the word "Converted" within the context of rice for their brand recognition purposes, and they use that made-up term instead of the industry standard term "Parboiled," which anyone can use.

@@bernie6448 The unofficial term "Egyptian Rice" can mean a number of things, but I have never once seen or heard of parboiled rice, which is what is being used in this recipe, being referred to as "Egyptian Rice." I have always seen it used to describe shorter-grained rices, either short-gram or medium-grain rice, or an Egyptian dish made from rice that is popular in the region.

No, because it is a traditional milled rice without parboiled rice's additional pre-milling processes of freeing nutrients via vacuum, soaking in a water bath, steaming under pressure to force nutrients into the grain, and then drying before the husks and bran are milled off. These processes are what makes the grains' outer starch gelatinized and gives parboiled rice its characteristic texture. But there is a Basmati called Sela (also spelled "Sella") which is a slightly smaller Basmati varietal that HAS been parboiled, and is popular in both India and the Middle East. I use both types on a regular basis, and Sela has produced the best results for me in recipes that would have mushed regular Basmati rice. You would do well to place a tablespoon of both types of raw Basmati side by side so you can contrast and compare them, then do the same with two batches of them cooked. This exercise will serve your future decision-making about which rice to use with which type of cooking. I hope this helps, and happy cooking, my friend!

Thank you, you are wonderful teacher. Love Egyptian food, but it is not easy to prepare. Especially chicken dishes, as many rase their own chickens. My kids love " chicken beak" soup. I tried to make it few times, but gave up. Noone eats my soup, everyone remembers soup, our friend made for us in Cairo.
