How do scientist count the number of protons/neutron in an atom?

So basically first they determine the number of electrons a specific atom has by using gamma and x ray spectroscopy. Then with that they can "choose" the number of protons the atom must have to balance the charge of the electrons. And the neutrons end up being whatever is required to sum the atoms atomic weight.

Now I have to be honest with you I looked this up to feel smart. But now I want to know how the hell can they just know it's atomic weight. And what if it's an isotope? That's got different numbers of neutrons right?? So lol idk really
