As a born french guy and lover of american bbq this looks amazing. I love blending the two

Looks great - my personal preference when finishing onion soup is to make the bread element like a pizza, bread with cheese on top - get it perfect under the grill (broiler) cube it, and float it right before serving. You can then make it cheesy garlic bread, or cubed smaller with firey pesto and mozzarella just to add different dimensions beyond the traditional Gruyere.

Great stuff -- this looks amazing. I really appreciate you expanding the scope of what we can do with a smoker, treating it like a proper tool in the kitchen.

Yup. Meats too expensive nowadays we gotta treat barbecue differently, but I know it’s out of the norm so I appreciate you watching!

Excellent video Joe. I like to add a tablespoon of tomato paste and a hit of sherry vinegar to round out the flavor. I feel W sauce has too strong and distinct a flavor, plus the Sherry vinegar reinforces the notes in the Brandy. Just my process.
@knoxavebbq11 ай бұрын
Yup. I added some sherry vinegar to mine when it’s ready to eat. Sounds good. Thanks for watching!

I always wondered if there was a purpose to putting the onion skins in the stock or if it was just convenience.
@knoxavebbq11 ай бұрын
Both! Haha
@DouglasRedmann11 ай бұрын
Great video however rather than simmering on stove have you tried in an instant pot?
@knoxavebbq11 ай бұрын
Are you talking about the stock? If so, usually when I make stock it’s much more than what would fit in an instant pot, but I’m sure it could work!

Maybe I'm just gullible, but the Korean newspaper bit is either a perfectly delivered joke, or you're being serious. I need this answer because if you're not messing around I'm gonna go to the Korean supermarket on my way home.

I would never joke about something like this.

It is one of the coolest on-going gags in internet cooking! I told it to my friends and they asked, "Where are we gonna get Korean newspaper in Colorado Springs?" @@knoxavebbq

I was using U.S. news paper biden was on the head line. The flavor felt lost and confused.
