As a dedicated vegan, I'm 100% behind the plant-based restaurant concept. But, I'd be very hesitant to pay big $$$ for a meal that's so small it has to be plated with tweezers!

I feel ya Altough i hesitate from idea of vegan. I love eating just veggies which i do like six times a week or two weeks But at some point i need some fish or little meat And it is not the slightest problem

The "old menu" was outstanding and worth every penny. The new vegan menu is very good, but is not worth the price of admission. Best of luck to Madison future I hope it continues to thrive. Had better veg tasting menus at the $110 price point.

Youve missed the point Completely. I really appreciate these chefs dedication toward the future of food for us all. We can All make a veg dish...but to make them Shine as these chefs do is an Absolute Art. Healthy, not raping the land or oceeans is even More Beautiful. Great job Eleven 💯❤️

I admire the sentiment, but if the goal is to get more people to go plant-based, shouldn't you be lowering prices? A plant-based meal that's priced over $300 isn't really going to win new converts.

I disagree, I can imagine the amount of work it will take to elevate what we see or taste as "just" a basic vegetable... dining at EMP is also an experience, the cost wasn't to pay for animal proteins. I'm excited to taste what chef has come up with!

@@christienyc I would disagree. When you pay the money for an A5 wagyu steak your paying for all the work that went into caring for the cow. With vegetables it’s just not the same. A vegetable based menu is cheaper then a protein based one. I love Madison as I proposed to my wife there but not a fan of this move. Completely screws over the hard working dairy farmers and fishermen who do things responsibility.

You’re probably not the demographic then and that’s okay ! An incredibly talented and creative team and a phenomenal restaurant. Not to mention you’re paying for the staff that maintains this experience. Multiple waiters to a table, dish washers, prep cooks, THE BEST CHEFS IN THE INDUSTRY. When you dine at this level you aren’t ‘just’ paying for food.

Ate at EMP once. It was so bad, we never thought to back. The food was creative in a bad way. For one of the courses, we were served meat lollipops- so gross. Now that they don't serve meat, it will only be worse.

Same here. Going all plant based and still charging $350 plus a person is crazy. Also screws over the fisherman and dairy farmers who do things responsibly. Proposed to my wife there so will be going back in 2 years for our 5th anniversary. Will see if it’s still vegan then.

You're right, for example, Wagyu beef and Dover sole are not acquired easily. The value of the food always played a role in addition to the artistry. May be great produce, but this will be pure artistry, which is interesting to try once in itself. It may be more "sustainable" but perhaps not sustainable enough to stay in business. I agree, give it time and at one point, a couple will say, we tried it once, let's go to ( ) instead for better value for the money. Some might still go for the "cause" or their diets but I'd also be comparing this with other vegan tasting menus.

While the chef should be congratulated for his creativity to work with plant items only it should be kept in mind that a vegan diet will not be healthy for everyone. The late Dr Gonzalez did blood typing and customized diets. He determined the four blood types determine the most suitable diet for an individuals, meaning some do better on meat and fish and others on dairy and others on vegetables, etc.

Yes, and children shouldn't be on it either. I remember one mom's small kids were on vegetarian/vegan diets and they looked so pale. Yeah, you can cheat by supplements, not ideal.
