I can't say I have much experience, but I kinda feel it would probably be good idea to come clean and let the guy know she sometimes get nervous and overwhelmed easily; both to filter him out early if he turns out to secretly be an asshole, but also to help reduce the risk of him overthinking things and thinking he did something wrong somehow.

On the topic of her telling him that she's never dated before, I'd personally be relieved by it since there are no pre-established expectations about what's supposed to happen. "We can take our time learning how to date each other." And upon learning he talked about his ex a bunch of times... maybe make it clear that you're not there to talk about his ex. You're not there to compare him to someone else, nor to be compared to someone else. It's not great that he brought it up in the first place, but I'd recommend a three strikes rule. If it keeps happening, he's not ready to move on.

I find this pretty wholesome. There's a big stigma(?) around vtubers, supposedly hiding they have partners so that fans aren't jealous etc. (I think hololive straight up has a rule that idols cannot disclose that you have a partner if she has one) Meanwhile Ellie straight up shares her entire date and people in the comments are supportive. I find this very wholesome.

Pretty sure the only rule Hololive has is that you shouldn't date someone working at the company. But the talents know what is expected of them. Some succesful Japanese vtubers are in a relationship without a problem because they never played into the idol culture thing. Meanwhile when Rushia got a message from a man it was immediately a huge thing... But Rushia literally sold wedding rings as merch.
