Emma, when you said that the chocolate is hard, it means that the chocolate is seized up. Chocolate is prone to seizing or tightening up. It happens when you overheat and burn it and when you let the chocolate come in contact with a little moisture or even if you stir it for too long - which is why we are always taught to keep chocolate dry. If your chocolate does seize, add boiling water to it, 1 teaspoon at a time, and stir vigorously after each addition until the chocolate is smooth. Or you can either add some sort of fat like vegetable oil, clarified butter ( not the butter that you use on bread, clarified butter is ghee) or Cocoa butter. Add a little bit and then stir vigorously until the chocolate is smooth.

When Emma poured the cold milk into the melted chocolate I literally almost audibly screamed NO YOU’LL SEIZE IT. Like PSA to anyone melting chocolate once you’re melting it you can’t add liquid or it will ruin it and make it clumpy and hard. It’s tragic. 😂

I screamed as well! PSA to anyone making chocolate strawberries: add a bit of coconut oil to help it set, if you like. If you add anything but pure oil/fat to melted chocolate it will seize or turn clumpy. You CAN pour hot heavy cream over the chocolate to melt it and make a ganache, if you want a thinner texture.

Tempering is the right procedure for melting the chocolate without shocking it. You have to simmer water in a pot, put in the chocolate in the bowl and you’ll melt the chocolate through steaming it. You should never melt the chocolate in a microwave oven or oven because it will ruin the chocolate and there’s nothing you can do to fix the consistency. Emma overcooked it🥲🥲
