I have the same mixer and you are right, it can go slow, but it doesn't go as fast as I would want it to on the highest setting...my old mixer went faster. But it's a good mixer nonetheless 😉

I had a gold Sunbeam mixer from the 70's but it finally gave up on cookie dough. It actually started smoking, but it was a trooper. Every homemade cake and batch of cookies since my childhood! My new one can hardly whip eggs 😒

Emmy, the “cocoa version” is the homemade version of chocolate syrup that I make with kids if we’re out of Hershey’s syrup 😆. I was very amused.

Resting Bitchface there are several recipes, but this one is for chocolate sauce from “cooking fun” by Rae Grant. ------------------ 1cup sugar, 1 cup unsweetened cocoa powder, 1 cup water, 1 teaspoon vanilla extract. Combine sugar, cocoa, & water in a medium saucepan. Turn heat on low and cook the sauce for 4 minutes or until thick, whisk occasionally to smooth out lumps. Let cool, then add vanilla. Stir well. Store in a glass jar with lid and refrigerate. Makes about 1 cup syrup. (Sometimes it is cheaper here to just buy syrup than to make it. Always compare your prices 😁)

Simple Syrup is simply hot water and sugar. It's basically the stuff they pump into drinks at starbucks like tea to sweeten it. I make it at home all the time for cold brew, because regular sugar doesn't dissolve in cold water. So if you add any flavorings to it, like coco powder, it is a syrup. Usually you put less water in to make it a thicker syrup though. Three ingredients alone can give you any type of sweetener syrup you want, including cotton candy because they make an extract for that.

XANTHAN GUM in instant coffee is what makes it fluff. You would have to add xanthum gum to the cocoa and matcha to get the fluff.

@@ilovenoodles7483 1/8th of a teaspoon per cup of liquid is usually more than adequate so for this, the amount you'd need would be tiny. A tiny amount of xanthan gum mixed with your favourite powdered workout shake can turn it into a lovely, very filling 'pudding'

Try this is you want to make it into a frothy mocha: - *1 Tbsp cocoa powder* - *1 Tbsp instant coffee* - *2 Tbsp sugar* - *2 Tbsp water* *Mix with a handmixer until fluffy unless you have a really strong wrist lol - *serve over whole milk* (you could add cream to make it more tasty)

I have a theory about why the matcha and cocoa powder ones "failed." See, the instant coffee crystals are dehydrated, yet almost completely water soluble particles of extracted coffee flavor without any of the coffee grinds being present, so they can dissolve completely and not leave any residue, also their particles are very very minute (nanometers in diameter) and this is why they can work well in this preparation. On the other hand, the matcha and cocoa powders are just finely milled plant particles, which have a lot of heft (due to the presence of naturally occurring cellulose and whatnot) and are larger in size (maybe micrometers?) So they can't really support so much air without collapsing into each other, creating more of a syrup than a fluff. I mean, if you leave a mug of hot chocolate made with cocoa powder aside for a bit, you'll see how there's a bunch of cocoa collecting at the bottom by the end, as they infiltrate the milk particles that can't really support them for long. Interesting video tho!

It probably tastes fresher - I've had eggs from grass fed chickens and you can definitely taste the difference between them and shop bought eggs.

Strangely, what people call grassy is a very nice flavor. Kind of a bright, sweet, leafy blandness that is reminiscent of the smell of freshly mowed grass. I've chewed on blades of grass and grassy is not what actual grass really tastes like. But grassy as it's colloquially used is one of my favorite flavors. 🤣

I actually tried making baked meringues using the coffee cream, it came out perfectly crunchy and sweet. I just baked it in the oven for 45 mins, 100°c.

I used to do this for my dad when I was veeery little, I don't know where he got the idea from...but I remember him asking for me to do this. But I "whisked" it using a tiny spoon, then he poured hot water in it and it tasted just like instant coffee hahahaha

We used to do coffee this way 11 years ago in saudi , you could put it in the fridge in a container and go out for a picnic or take it woth you to school with a thermos for hot milk and serve it to the group

This is actually really popular in Egypt, when making coffee we just mix the instant coffee and sugar with a spoon full of water in the mug till it reaches this light colour, and then add hot milk, I'm surprised that this made it to the internet! And even more surprised with the reaction its getting! This is everyday life to us. We usually stand in the kitchen talking while making it at work too 😄

Reema Al Dahneem It was still runny. I think if you keep the coffee water ratio the same and just add in coco powder it will stay at a good consistency! It tasted great, though!

I tried adding cocoa to the coffee but it didn’t froth 💔 so i made chocolate milk and topped it with the coffee froth and was good 😍

Put the chocolate syrup/ foam at the bottom of the cup add milk 🥛 then add ice 🧊 then the coffee foam and there you go a homemade Starbucks drink ☕️

I decided to try making this (the coffee one) on a whim today, the first attempt didn't work out as I tried using a hand blender. Of course then I realized we had an electric whisk so we pulled it out to use it. It turned out amazing, it ended up being kinda mousse-like and very creamy, my mum was super surprised because I think she thought I was mad when I started setting it up.

I tried adding 1 tsp of Fry’s cocoa powder to the final whip and the end and it was great. A second tsp destroyed the whip, turned it syrupy. Still yummy though.

This has been going on in Greece since the late 60s; they call it the “Nescafé Frappe.” It started out in a shaker and later they started using the little hand-held blenders. Later they also started adding some evaporated milk to it at the end. There the actual frappe is always iced but people do like to beat the Nescafé when they make it hot too for some foam on top.

This was such a fun video! I didn't have any instant coffee so I tried it with cinnamon and let me tell you cinnamon foam is delicious! Like the best ever! I have started putting a few spoonfuls in my morning coffee! Thank so much for this new treat! For anyone wanting to make cinnamon foam use equal parts sugar and cinnamon with 3x as much water. The cinnamon will get the consistency of slimy batter but it foams up really nicely.

I tried this and failed miserably. So frustrating! I used a really cheap brand of coffee so maybe that was the issue. Some site said blend for 8 minutes. I gave up after 5 🤷🏽‍♀️ I’m going to try your recipe tomorrow. We’ll see what happens...

Emmy to do this with green tea you'd probably have to make the green tea and then freeze dry it and collect the crystals of green tea leftover to get the appropriate fineness. Much more fine than the macha powder itself.

TheEarthCreature I was thinking that the biggest difference is crystals versus powder. Powder particles are probably smoother than crystals. Maybe with powder there isn’t enough friction to make a foam.

@@Catwomen4512 I think you can because the particles that suspend in the water are much finer than the leafy ground powder they leech out from, so when you let that settle and then freeze dry the top you're left with ultra puffy crystals that are made with only the finest of the finest of the particles from the product you originally started with.

"Its a matter of weight ratio" as my friend @MontyPython likes to say. @Emmymadeinjapan Since we've all got time on our hands, I think you should test matcha and cocoa at a 1:2:2 ratio so there's less powder. I think the dissimilar size of the powder and the sugar prevented it from foaming nicely. And then test matcha and cocoa with confectioner sugar at the 2:2:2 ratio. Good luck!

curiousdilettante Maxim is a popular Korean instant coffee brand! There are others like Kanu as well. Some have creamer powder mixed in with the freeze dried coffee so lookout for that if you want to make this recipe!

Emmy, I made a "matcha-whipped topping" following your previous video for the magic coffee one (I run out of instant coffee) It worked out well, super sweet but it worked out. I used a leftover package of instant iced matcha drink and 2 tbsp of iced water and sugar- which I should had left out because the matcha mix had sugar in it! So maybe the trick is in using iced water for the matcha and cocoa powder...or maybe it worked because of the extra ingredients in the matcha-drink mix.

Could be the way it's processed too! An instant drink might be freeze dried like the coffee, whereas matcha like Emmy used is genuinely just very, very finely ground tea leaves. Either way, sounds like you managed to make something amazing to me!

Ty Emmy .. you’re such a ray of sunshine .. made me feel connected and smile. I made the dalgona coffee with iced 1% milk and it was delicious. I hand whipped it and that’s not easy at all. It must have been at least 6 minutes before it became thick and I think I could have gone another 3 minutes, but it was thick enough to put on the 3/4 cup iced milk. I sprinkled some cinnamon sugar on top...was amazingly tasty. But don’t drink the foam, mix it into the milk first and leave a bit on top, therefore you won’t get the bitter burnt taste. It’s worth the time! Also, please use an electric mixer!! Takes too much time with the whisk. 👏🏻❤️✌️

I bought this milk frother stick from Bed Bath & Beyond like 4 years ago because I wanted to make myself chai lattes. I sucked at making the milk foam and it's been collecting dust. Lemme tell you right now, it REALLY works for dalgona! It takes like 2 minutes for a cup FULL of foamy goodness. I don't regret buying this thing anymore and I'm using it all the time ^.^

Make sure you have a really big/deep container. I tried in one that was more cup sized trying to be lazy and not make extra dishes, did not go well for my kitchen.

i tried it in a blender this morning 1/4 cup(60ml) of everything. blender started to leak after 2 minutes, so it didn’t get as fluffy as in the video, but it obviously worked. i had to add a lot of milk to make it drinkable, it’s really strong and sweet. WAY too much for one person, but i had to try it😄. i’ll make it again for a friend when the quarantine is over.

When you first put out your video for whipped coffee, I had to try it. My mom told me she used to make it back in Pakistan as a special treat because instant coffee was hard to come by. Then my sister shows me a tiktok about whipped coffee. Finally my friend in South Africa snapped me of her and her relatives making it. I am now going to try it with matcha!

I tried adding cocoa powder to the coffeefroth when I made it about 2 months ago to try and make the coffee taste not as bad. It made it taste muuuch better but very soon the froth died... I think cocoa has too much fat in it or something...

I would argue against that. The coffee syrup--no, not dalgona, not whipped chocolate, it's just syrup--was quite heavy. I could easily tell there was hardly any air in there when it sank to the bottom of the milk like a rock. Combining coffee and cocoa and attempting to froth it up would either take just as long as the cocoa-only version, and the foam (if any) would disappear in a short time rather than stay for hours on end.

Made the Dalgona tonight. I used whole milk for husband and teen kid and almond milk for me. WOW!!!! It was sooooo good, we will defiantly be making this again. Thank you Emmy for making this stuck at home a little more entertaining and fun, not to mention tasty!

I had never heard of this until I saw your video. I tried it and it was DELICIOUS! For people watching their sugar you can swap half the sugar for stevia w/o significant flavor change. It works with just stevia as well but I wasn't a real fan of the flavor. You can also freeze this for a mocha flavored mousse that delicious on it's own as well.

If I was to wager a guess on the foam, I'd guess it was the proteins and oils from the coffee beans that are at saturated levels because of the freeze drying.

​@Kate Stewart Not really, tho I did muse over why they wouldn't and while I am no expert the thing that struck me was the additional bulk solids that you wouldn't be dealing with in the instant coffee. I'd think that the elements would be there at least in the coco powder (not sure about the matcha, cause I still think a lot of it is proteins) but it'd be in all the wrong proportions and there is just a ton of extra junk material in the powders. Where the brewing/freezedrying gets rid of that junk material with the coffee. Again that's all best guess, tho it would make an interesting science experiment.

No, the lower oil content the thicker the foam. Oil causes the bubbles to collapse faster. That's why spray-dried coffee makes thicker foam than freeze-dried coffee. Cocoa powder has too much oil.

The cold coffee mixture is what we usually drink in Greece during the summer. Try using a straw to mix it, it is so much easier to drink it that way!

Made this today with my emersion blender and it worked great. I was surprised how sweet the coffee foam turned out. It was enough for probably 3 glasses but i divided it up into 2 glasses. I used Cafe Bustello instant espresso (Mexican Espresso in Texas). Good stuff!

This coffee foam is actually originated from Macau during the 80's when still under the portuguese administration. Portuguese people love espresso coffee with a layer of crema but on that period, a domestic espresso machine is not that popular and affordable. Simply used a espresso cup with a tsp of instant coffee, sugar and adding hot water drop by drop until it turns into a thick paste. Then whisk vigorously with a spoon until light and creamy. Add hot water to the same cup and a handmade espresso coffee is served. Comment updated on March 27: Since Emmy had mentioned Macau on this video, I was trying to share my version and what I knew about this way of making coffee. Also this handmade "espresso" is always served hot with a layer of crema. What was shown on this video is probably a variation of this foam made by a south korean guy who visited Macau and suddenly it was everywhere over the web. I'm sure there are many other versions and origins of this coffee and I'm not saying that mine is the most authentic one.

I will bring this up next time we have this talk lol even though I'm only part Portuguese. No, this was made during WWII when there was no milk, the frothing foam was added to hot water and it appeared creamy as if dairy was added.

Okay, I made this! Even with my hand-mixer breaking down (one of the rotors got off somehow and kept hitting the other one and locking up!), so I finished it with one instead of two - it took longer, of course. It turned out awesomely, though! Still VERY strong coffee flavor, but the texture is wonderful. My friend tasted it and said it reminded her of those Coffee Nib candies and so I dolloped some into a jello-bean mold and put in the freezer to make little frozen whipped coffee nibs. Still haven't tried the monkfruit sugar version, but that won't be till I can get a new hand-mixer. Alas.

What would happen if you whip the coffee and Coco separately then fold the Coco into the coffee foam. Also look for a Mexican Style instant coffee called ( Nescafe Cafe De Olla ) This is a cinnamon flavored coffee.

I made the first time this morning and it turned out great! I used regular instant coffee, and the only thing I did different was add about a teaspoon of sugar to my milk before adding the foam, this counteracts some of the bitterness.

I made this and tried to freeze some to see what would happen - surprisingly didn’t deflate or solidify ! It makes it nice and cold and a little firmer so that you can make it in advance to go with your milk.

@@graciereed7325/videos Sugar raises the viscosity and helps the foaming process but brewed coffee has a higher oil content than freeze-dried (or spray-dried, which has the lowest) instant coffee. The oil causes the bubbles to collapse faster. That's why cocoa powder doesn't foam up.

The only reason that I can think of for the difference in how each of the ingredients whipped up, is that instant coffee is generally more like slightly chunky coffee "crystals" and the cocoa and matcha are both very finely milled powders. I also wondered if the matcha and cocoa might have actually worked better with ice water instead of hot water to give them the thicker, airier consistency like the coffee whip you made in that older video. I haven't experimented with any of them yet, but I do think I might give them a go! No matter what the results might be, I'm sure they'll all be yummy! Thanks for another fantastic experiment, Emmy! Your videos never, ever fail to brighten my day!

Most instant coffees have additives like emulsifiers, which might be the reason for the matcha and chocolate not beating into the meringue-like texture.

I kept on seeing this recipe on TikTok just like you did, so I decided to try it today. It's definitely got an interesting taste, it's not my favourite though. What a fun and aesthetic experiment to do though. I love that you did it with matcha and cocoa powder though too, how creative!

I made this the other day and the way i turned mine in to a "mocha" is I added it to chocolate milk, instead of trying to add the coca powder to the mixture before whipping. You can add it to hot coca already pre made and it would be the same thing. Very delicious and this is definitely my new favorite thing!

Jessica Sebastião My friend and I tried it after seeing it on Tik Tok. We’ve made it everyday since. 😂 It’s SO good if you like the taste of coffee. It’s not bitter, but it’s also not super sweet. It’s delicious! We just added caramel syrup. 😊

What a fun experiment. I'm also lactose intolerant and I've switched to lactaid milk. It's easier than the pills. You will love it. The tastes is great. I also like coconut milk for my stomach the most. Cheers! Thank you for sharing!
