Visited Japan in Sept 2019 and saw the Asakura District and Kappabashi. Bought a Damacus steel Santoku knife at Tsubaya Cutlery. Amazing sharpness and balance. Japanese cuisine is about preserving the texture, juices and presentation of the foods you cut, so the knives are sharper and thinner than their western counterparts. Watching a trained Japanese chef is watching artistry. 😃

4:06 comparing the thickness of her finger to a deba? deba is a bit like a cleaver some times used to chop through fish bones. but i think it's more common to use a saw through certain thicker bones, and cut around bones with thin knives. in bigger proteins.
