I'm pretty sure you can, but you might lose Apple Intelligence features. If I were you, if you value Apple Intelligence more than future updates, don't update to future ones. If you need the updates, I would probably undo all the steps BEFORE installing the next update. Sure, you'd lose Apple Intelligence until a new workaround is found, but it's much better than running the risk of running into errors on the next update.

This can be fixed by going into Settings, switching Apple Intelligence off, and waiting until the help text below says it’s still downloading and that some features may not work. Then, just switch it back to on.
