Ok. So I made this recipe. The recipe works beautifully. I made a mistake and forgot to dredge the tortillas through the sauce before rolling. This does make a difference in the “sauciness” of the enchiladas. This was a mistake and now I know the importance of this step. I also forgot onion in the stuffing. A bit of crunch on the inside would add a bit of texture. But this is the VERY first time I made enchiladas in my life. The instructions helped me experience some success with enchiladas and I feel encouraged that I can successfully make enchiladas. I sent a picture of my finished product to my son. He was impressed and wondered if I felt confident enough to try making tamales. I said that might happen....thanks to Rachel!

I've had such good luck leaving a little space between the enchiladas. Mine always fell apart when I would cut into the compacted enchiladas and looked a mess on the plate. Now, that I can take them out intact, all my hard work looks beautiful on the plate. Your recipies are amazing. Gracias!💗

Rachel watching you cook reminds me of an old friends mother years ago. Her name was Lola, and she came to the States fron Tijuana Mexico during the late 1950's. I loved hearing her talk and explain recipes, and I had to learn some Spanish to understand her. Your recipes are so much like hers, and I love watching you and listening to you. Thank you Rachel ! You Answered many questions I have about suizas. I wondered about using cream cheese and sugar as I use them in other acidic sauces. I am making these for a pot luck this week. The only difference is that I’m going to do them casserole style instead of rolling them up because it’s during the work week and it’s much faster that way, but I will dip them in the sauce like you do.

Oh my goodness does this ever look delicious. I'm going to cheat tonight and use green enchilada sauce and add the garlic, sauteed onion and bit of cream cheese like you did with the tomatillo. These look so amazing, and really similar to what a friend who grew up in Mexico used to make us when we lived in California. Now we’re back in the Midwest, but we have a good Mexican grocery store near us…looking forward to getting some crema and « real » tortillas. (The regular grocery store considers Old El Paso to be exotic! And ethnic! Lol). Love your videos, everything is easy, and like something your mom or friend would make for you. I love the step by step instructions, the alternatives, and the advice on how things taste if you do something a certain way, and why you might want to do it. Better Mexican food coming to our house, soon!

Our friend in California and her husband from Jordan lived upstairs from us, and came over one night on happenstance when my husband was making « taco night » meaning, the standard Old El Paso (I’m from the Midwest, he’s from the South) and they thought it was hilarious and said they enjoyed it, and we had a fun time laughing about it. They did enjoy having dinner when we made some traditional Midwest or Southern food, and they would in turn make us Mexican or Jordanian food. (We ate a lot with out friends, lol.) Miss them a lot! It was always a different culture dinner experience, and we all learned a lot from each other!

I like how you don't overdo the cream cheese n crema. I've seen other cooks who pour more crema on top just before serving, and yours look just right with the quantity. I'm looking up the rice recipe also. Ty.

This is my husband and my favorite enchilada dish. Mine are in the oven. They look awesome. Im using my home canned chicken and home canned tomatillos. Would rather use fresh tomatillos but I have a glut of canned. I only wish this gringo could make home made tortillas. Store bought fall apart. We moved from an area with tons of Mexican grocery stores. I really miss them. I really love your channel.

Now I’m no expert but… I’d roll them up in the pan I’m gonna bake them in so I don’t waste any sauce on that cutting board. It does look way too good to lose any of that sauce…they look delicious!!! YUM!!!🤗♥️‼️

Hi Rachel! Thank you so much for this recipe. The problem I had was that we don’t have fresh tomatillo in England( if we do, they’re certainly not easy to come by) I used tinned tomatillo. It was okay but I’m sure far better with fresh.

You mentioned “Your Ron” doesn’t really care for cilantro. I was an adult before I ever tasted cilantro and I didn’t like it either at first. But everyone I knew was raving about it, so I didn’t avoid it. Eventually I came to tolerate it more, and even like it. NOW, just a few years later, I LOVE it. I love the smell of fresh chopped, and everything seems to taste better with it. I guess it’s the ultimate “acquired” taste! xop

Love the addition of the cream cheese and crema which I've never put in before but certainly will this weekend. Thank you my friend, I love Pollo a la coca COLA alot, so glad you liked it...you know, the reason I like cream cheese and crema in my tomatillo sauce is because it balances the acidity of the tomatillo, though they aren't that acidic since I stop the boiling quickly, but it ends delicious. The homeade corn tortillas make a big difference in the taste too. I am new the that particular cheese and it crumbled more than shredded. Yours look great. Does it come with time or did I shred it wrong? The enchiladas still tasted great though.
